Hi, I'm a food nerd and amateur food historian. The orange color of cheese is annatto, a nut that's native to the Americas. That's the deep orange cheese color and it's ubiquitous in our cheddar so lots of cheddar derived cheeses(like American) are also orange.
I made a burger for dinner and used a slice of havarti and a slice of american. So today.
If you want to nerd out on cheese, look up the history of sodium citrate cheeses.

Tillamook cheese originated when the pioneers arrived with their milk cows on the Oregon coast. Green grass, great growing. Suddenly more milk than they could use. Brilliant idea! Born, raised and still live in Wisconsin. Dairy is life.
Of course we have all the American slices, liquid nacho style, etc...
Grilled cheese dipped in tomato soup or ramen with veggies. Add a slice of American style for melting and something else for flavor. Maybe a slice of ham in between.
Cheese as a snack: We have curds made that day bought from the grocery store, not refrigerated, they should squeak when you bite into them.
And yes, while cooking the kids will ask for slices off the block or crumbles of parmesean or romano when adding to pizza or pasta - not out of a shaker can, it needs to be grated off a wedge.
Honestly when its hot and I dont feel like standing in front of stove sometimes a meal is crackers, sliced block cheese and summer sausage or salami or pepperoni slices, the kids can make their own little sandwiches to their liking, serve with cherry/grape tomatoes and olives and that's a no fuss and light meal to deal with the heat.

The funny thing about shredded cheese is that if it’s freshly shredded off of a block, it is really really good if it’s out of a bag, it usually has a funny flavor to it because they typically have to dust it with really fine layers of either cornstarch or some other nonstick dusting powderor else. The cheese in the bag will just clump together and it won’t really be shredded anymore. it’ll just be a big clump of loose cheese.

sure but it's still over 99% dairy last i checked
and the difference between american and traditional cheeses is literally just the addition of small amounts of emulsifying stabilizers. nutritionally, the only major difference is american usually has a lot more sodium bc the emulsifying stabilizer usually used in commercially sold american cheese is (small quantities of) sodium phosphate. it's naturally occurring in meats, eggs, and nuts and is very commonly added to deli meat to help cure it. (i wonder if that's why i like american cheese tbh, since i like nuts, eggs, and deli meat a lot, too.)

    • @taemien9219

Kraft is not the only brand of American Cheese. And I see claims that the slices aren't real cheese. That might be true for Kraft or some other brands, but I don't believe it applies to all. For example in my local grocery store they sell American cheese slices and blocks of cheese of various types (Cheddar, Mozzarella, etc). Let's look at some of the ingredients. First lets look at Cheddar: Pasteurized Milk, Cheese Culture, Salt, Enzymes, Annato Extract (color). Its basically the bare minimum to make cheese. Then their American Prepared Cheese: American Cheese (Milk, Cheese Culture, Salt, and Enzymes) with Tricalcium Phosphate (a calcium based salt, used to add calcium and to prevent clumping in some foods), whey, food starch, sodium citrate (emulsifier, allows the cheese to melt), non-fat dry milk, cream, citric and sorbic acid (for preservative), lactic acid for color, and vitamin D3.
As you can see the American Cheese has nearly all the ingredients used in Cheddar aside from a different product used to get the color. With of course agents added to make it pliable and such for sandwiches, most of which are derived from dairy products. @pooftiger actually explains this pretty well. They literally take cheese and put it through another process to make it ready for its intended use.
Sure it has some stuff added, but so does pepperjack and other cheeses with added bits in them. They're not suddenly not-cheese because you can see bits of non-cheese in them.

What they forgot to mention about processed cheese is that it's initial popularity was heavily influenced by WW2. The soldiers ate a lot of it, developed a taste for it, then ate it all their lives. Their children then had it as kids and had a similar situation. However, those two generations are almost gone entirely, and with them went a lot of the buyers.

Not many people would eat process cheese by itself when there are thousands of real cheese to choose from. Process cheese is used in the fast food industry because you don't have to cook it to make it melt on a cheeseburger. A process cheese slice will melt just from the heat of the burger or fillet so makes building a hot sandwich truly "fast food".

My favorite childhood memories for fast food burgers has to be A&W. The one we went to was a drive up kind. You parked, pushed the button on the stand next to your car and gave them your order for everyone in the car. The server would bring a specially made tray out to your car and clip it to the driver side window. A&W is still famous for their root beer floats and back in the day they would come in a frosted glass mug! Kraft isn't just popular for cheese but it's probably the #1 producer of cheese singles. I had a slice with some Ritz crackers two days ago, lol. They have a MULTITUDE of products across all food markets. With big brand products, you can find them all over the US so yes the Philadelphia cream cheese flavors can be found everywhere. Now it's all dependent on the store to stock them so what you won't necessarily find is every store using ALL the flavors available but just the popular ones that they sell which can be different from region to region.
No processed cheese isn't NECESSARY for burgers and most people who make PROPER mac n cheese would NEVER used processed cheese, lol. But part of the reason it's so good with burgers and other things like dips is how it melts which a lot of cheeses don't do as well.

American sliced cheese is more about the texture than the flavor. My dad who is 90, likes to snack on American Cheese and puts it in sandwiches. I buy it often, but almost never eat it.
I prefer snacking on more "real" cheese, I'll try any kind. Things like the baby, and even real brie and smoked gouda and goat cheese, fruit flavored blue cheese, cream cheese spreads, and yogurt, were not available when my dad was a kid in the 1940's. Even when I grew up in the 1980's, there was mostly processed and hard cheese. Yogurt was kind of a novelty.
Today in the US, you can even find craft cheese made in your own region, (not just Wisconsin) modeled after various European styles.

Taco Bell is OK, but it is not Mexican food. I refuse to go to Taco Bell anymore because my local Taco Bell suggested that I use the kiosk. Does not work for me especially when I want to oder off the menu. They were advertising bringing back the Encherido and it was not on their menu. I guess they didn’t get the memo that old guys don’t do kiosk and we pay in cash and we eat Encheridos.

Something that most people don't seem to realize is that Kraft Singles/Processed Cheese/ Emulsified Cheeses can easily be made at home. They're mostly dumping all those other ingredients in as preservatives and to keep the cost (For shipping and distributing) down low. You should check out how Emulsified Cheese is made, really fascinating stuff.

Don't believe that milk is bad. People have been drinking it for centuries.
5:00 Dominoes is not the best pizza to get but the 'Price : Taste' ratio is about as perfect as you can get.
10:45 Jalapeno is a Spanish word so you have to pronounce the 'J' as an 'H'. That is the only difference. Very easy to pronounce.

Jalapeño. You need to pronounce the ñ. Hal-uh-pain-yo. Not hal-uh-pee-no, which is the most common mispronunciation I hear.

I never buy Kraft singles. It contains an antibiotic, natamycin. This is a prescription drug. I buy Kraft Deli Delux American cheese. It has much less ingredients, and no antibiotics. Before Kraft introduced singles, we only had American cheese, which is now labeled Deli Delux American, which is real American cheese. It probably costs a bit more, but tastes better, and has less fake ingredients.

I put extra butter.. and even put extra salt on it.. I like the real cheddar mixed with any other cheese I have on hand. I personally stopped drinking milk when I realized it wasn't good for adults. Only baby cows should drink milk.. BUT I use tons of full fat cream.

Yes, cream cheese is readily available in grocery stores everywhere in the country. I don't know about flavored cream cheeses; I've never looked for them. And yes, Philadelphia is the largest brand of cream cheese.
Thin cream cheese with some milk and add a dip mix or salad dressing mix to it (French Onion and Ranch are both popular flavors) and you have an excellent chip dip, for people who don't like sour cream. People also like to spread cream cheese on bagels, add it to sandwiches, or sometimes put it on baked potatoes.

It is considered what we call comfort food..buttered bread toasting in a skillet…flipped over and add as much cheese as you want…the cheese melts..some people also have some hot tomato soup…and you can cut the bread or leave it alone…good stuff…obviously not what you would have every day…but good any time…great on cool rainy days…

About ten years ago they had a limited edition Philadelphia Bacon cream cheese, it was the most amazing thing ever. Sad when they discontinued it. In Arizona both Grilled Cheese and Quesadillas are popular. Butter on the bread, sliced American cheese and fry it it up in a skillet for the grilled cheese and Quesadilla same idea, butter on tortillas with shredded cheese and fried. Grilled cheese sandwiches you can add ham between two melted slices of cheese or chicken quesadillas are popular too. Plus nacho cheese dip reigns supreme. It's also amazing on bratwurst.

There are now many generic versions of Kraft/American cheese and are usually a bit cheaper. I personally keep a 16 slice pack in my refrigerator to use on demand, depending on what I am fixing, such as cheeseburgers. For my ham sandwiches I have gravitated to pepper jack cheese. I liberally use finely shredded cheeses in scrambled eggs, casseroles, etc. One thing that changed, I used to by cheese in bricks then shredd it myself, but having it already shredded is so convenient.
I was about 8 or 9 years old when Louisville got its 1st McDonalds in 1964, when the outside sign actually gave a count of how many burgers had been sold nationwide (over 2 million sold) LOL. The buns and condiments seem to have changed but the cheeseburgers are my go to order the few times I visit McDonalds.
Love your content and reactions, Andre! ❤️

The last time I had Kraft cheese was about 30 minutes ago. I have a sandwich with cheese and some lunch meat in it every day before bed. My favorite flavor is Pepper Jack which has tiny pieces of Jalapino peppers in it. Then about eight hours ago I had a small frozen pizza. I eat about two pounds of cheese a month. I love it!

Since we are in Florida and it’s hot, we usually took it home. It was so exciting when they built a glass enclosure around it and put in a.c. lol.

18:51 "Store are stocking ever greater varieties of cheese…" Yes. I've noticed more varieties of cheese even in my small-town grocery store. My favorite is a sharp white cheddar, and that's something I would never have found for sale here until recent years. Another example would be hard asiago.

A company in Oregon called Tilamook makes an excellent extra sharp white cheddar. It is different from 5he extra sharp yellow cheddar for some reason. It is a bit prone to crumble , especially if not at room temperature. It is available in many regions of America, I highly recommend. Then there many small cheese makers throughout Oregon and Washington.
