I could be wrong but Vinny at least started out editing these. Old episodes you can hear Brad telling Vinny do put in "his little characters" or something along those lines. Like I said I could be wrong but if that's the case then it was Vinny's editing in the beginning that was probably just copied by new editors that came on to help when the show got really popular. "It's Alive" is easily one of, if not, _the_ , most popular show on Bon Appetit, so it's easy to assume they've brought on extra help so that they can make more episodes faster. And seeing as how the editing is one of the staples of the show, if Vinny started out with that editing style, then the new editors are obvious going to copy that style.

Top tip! Never boil miso! Well, you can, and it’s still miso - but if you want REAL miso flavour (in like misoshiru aka miso soup or something) DISSOLVE your miso in a little bit of the stock in a ladle or a bowl outside the main pot, and then add it back in. The main pot/soup can be hot but not boiling. Boiling kills that strong, fermented miso-y flavour, you just get like a beany water the more it’s boiled. Not really sure why, maybe boiling sterilises it, but you see Japanese chefs/mothers doing it all the time, and it’s like general knowledge in Japan. Also from personal experience.
With any fermented food, boiling or cooking is going to kill all those good bacteria. It can degrade or alter flavour compounds too, but the sterilization is the big issue. You go through all that effort to grow up some nice symbiotic microbes, and then you just toss the poor little guys in a boiling pot.
Anytime Brad cooks with garlic I get so frickin excited just to hear him say "allicin" or "two-part epoxy." Thank you, Vinnie, for coaxing that out of him.

The ones that aren't heavily subsidized to take up and abuse more land and soil, ruining the environment around them and the environment disconnected from them, while doing little to no work. Because the right farmers are the farmers who are in poor countries that have to deal with unfair trade regulations, or the urban farmers living in poverty with the constant threat of real estate owners forcing them off the only share they have to feed their families. Or the farmers at small farmers-markets who are under constant pressure and competition from food corporations who want to buy them out or out-sell them, and promote food deserts in rural regions that rely on the farmers for food and employment. Those are the farmers that don't get enough credit.

Thanks for continuing to make these videos, I absolutely love these and look forward to them. Brad is a great off-the-cuff host. Hands down the best show on Bon Apetit (you should have your own channel in my opinion), and possibly my favorite online cooking show. I love the concept, editing, hosting and the cooking so so very much. The collaborations are great too (huge fan of Babish, Hot Ones, Matty, etc.). I think I've watched a video by Hiroyuki Terada which had something that looked like smoking the tuna in a local place that makes katsuobushi. I would definitely appreciate you guys doing a video on the process of making bonito flakes, live fish to end product.

I suspect that it may have gotten too hot when I first turned it on, perhaps - I know it felt hotter back then than it does now, even though it was only set to "Keep Warm". I've got another bulb of garlic in there now to test that theory, but it never hurts to get more input, right? ^_^

How's that black garlic coming, Brad? Mine got too dry and hard, so I'm looking for tips.
(Not that the dry hard ones are necessarily *bad* - they're actually pretty tasty - almost a coffee-ish taste to them.... but it's not what I'm trying to do.)
Have you tried using a rice cooker or something similar? It doesn't end up dry or hard
@@k07385 That's actually what I'm using. I suspect that it may have gotten too hot when I first turned it on, perhaps - I know it felt hotter back then than it does now, even though it was only set to "Keep Warm". I've got another bulb of garlic in there now to test that theory, but it never hurts to get more input, right? ^_^
