hahaha it's more normal than you think, the tails have a solid collision. The Wyvern knock you down, the Titanite demon can accidentally gouge out your eyes and Kalameet leaves you like Don Ramón del Chavo. (stamped on the floor)
The backstab in the second clip is a classic. Turn your back on human enemies for a single frame and they immediately backstab you. It's why I personally always lock onto human enemies.
Dark Souls is really, really good, but honestly not particularly hard if you are used to the general gameplay style of Soulslikes. It is more focused on exploration and finding your way than on super tough bossfights, and a lot of the challenge instead comes from enemy encounters within those levels. That being said, it also does have its share of super tough bossfights.
