    Nisha is a wizard. I've learned that Onion, Ginger and Garlic are the sacred trinity for meat dishes and that Turmeric, Chili powder and Garam Masala are the trinity of spices.. add a headnote spice like ground coriander for fish or creamy curries, tomato and green pepper for a red curry or creme freche, coconut, banana or lychees for a Kashmiri, northern Indian style fruity, sweet curry. Add turmeric, fenugreek powder and salt to chips, add coriander to everything, lol and avoid adding hidden heat... stay in control of the heat in your Curries.. I've learned all that from Nisha's videos.
