In a dry climate the brake fluid doesnt have much water to absorb but its probubly well old and full of bits of rubber so a good fix regardless of what the meter says. Yes a new clutch can be pretty light and a worn one can be a workout as the diaphram spring goes more over centre (early landys (S1/S2) had coil sprung clutches so they got lighter as they wore giving less clamping).
