Thank you for the history, I always find what you share interesting and informative. I love spinach. I only grow it in the fall now because it is so much better. My favorite dishes for spinach are in salads, a Greek dish- Spanakopita and an Italian dish for a spinach dumpling like ball that can be added to spaghetti sauce. Someone from Italian heritage probably knows much more about it but I think it is called Mal Fete- and I may not be spelling it correctly. On another note, I just discovered this week that 2 artichoke plants are actually coming back!! I planted 15, which was way too many, but at least I know now they can endure our winter. I am so excited to see how they develop this year. Love your videos, always useful information and interesting to hear other gardeners’ experiences 💚💚💚

My mom used to make a spinach and cheese savory "pie" when I was kid that I loved too. It didn't have a crust and I have the recipe around here somewhere that I need to dig out and make again. That is awesome that your artichoke plants are coming back! I need to try again since mine didn't survive after my double pruning mistake. With 15 plants you should have plenty of artichokes by the end of the summer!

I love spinach but we go from 40 to 90 in about 3 weeks so we have a very short window to grow it.
Wow, that is quite a swing! That definitely makes it difficult for the cool loving crops!
