    If you want an easier version of lasagna for one person (or less people than regular lasagna recipe), try roll ups! You cook the noodles, then mix some garlic and (cooked and drained) spinach into a package of ricotta. Then lay out a noodle, thinly spread the ricotta mixture across it add any veggies you want then roll it up, you can put them in a container and pour tomato sauce over then and it’ll keep them hydrated and good in the fridge for days! It usually last longer and you can make as many or as little as you want and they travel well so it’s good for lunches at work or school😊

    I loved the phone call with your mom! I often find myself calling my mom and ending up with an obscured family secret that is only passed on from female to female that comes with a story of when my grandmother was a maid in the house of an Spanish architect or something like that 😂

    I hate overnight oats because of the texture, i always end up blending it and making an oat smoothie 😂😂😂
    One of my favorite salads to meal prep is 1cup of dried quinua (cooked, obviously), 2 onions, 2 red bell peppers, 4 roma tomatoes (all cubed), 1 shredded carrot, cilantro and parsley (about a cup?), olive oil, salt, pepper, garlic (a few cloves or granulated) and lemon juice. If you want, you can add 1cubed mango and some sweet corn. All this makes about 10 servings so it is a lot, but i love it! I guess over there this would be more of a summer salad, but yeah, meal prepping is great!

    I really liked the tip to use the sale paper when you meal plan. I had not thought of that before this and I am definitely going to try it.

    Also an easy pancake recipe. I poke holes in a big sweet potato and microwave 7 min. Cut it open and mash up the filling, scrape the mashed potato into a bowl. Add 1 egg and a mashed super ripe banana. Mix well and then pan fry as usual.

    Hi! Nice video and congrats on your first ever lasagna! Just a tip to change it a little bit: instead of ricotta, try besciamella. It's so much better! also, if the pasta came out a bit hard (it happens to me all the time with gluten free pasta), you can try to boil it a couple of minutes before assembling everything :)

    As someone who doesn't like ricotta, I use cottage cheese to make lasagna - it's a cheaper option most of the time too. I've never prepped any kind of fritters and that was a good idea, I'll have to try it.

    I don’t necessarily meal plan but every week I plan what will be for dinner only. And then my husband will take leftovers for lunch. But I definitely try to make each week overlap in ingredients!! it has been such a money saver to plan. even if i am still coming every night it saves so much time to know what i’m cooking and know if i need to defrost certain things earlier and such.

    I also do the quinoa+vegetable salad with vegan chicken nuggets. I roast the vegetables in small cubes and then cook and cut the nuggets in cubes as well. When I toss everything together I add some dried cranberries and walnuts for a sweet crunchy flavor 🙌🙌 one of my best dishes

    Girllll you need ricotta on lasagna, is the cheese money better spent ever 🤣🤣🤣 And, mom is right, lasagna tastes even better as time passes. Loved the meal prep recipes, I was a vegetarian couple years ago, kind of hard to keep with a growing kid but do include lots of veggie meals still. Keep doing these videos too, love the ideas ❤

    They all look so good! I'd love to hack the lasagne with lactose free or vegan cheese and gluten free noods 🧀 I will be sure to report back if i can make it happen. Mother in law is celiac and I'm allergic to dairy.
    The overnight oats look delicious!
    It's mid terms this week for me, and you have inspired me to up my game on the prep. I usually prep either dinners or lunches, but I'm going to do breakfast too this time!

    How did you reheat the pancakes, in the pan or in the microwave? I like the idea of meal prepping, but I don't love cold lunches and I don't have a microwave so I need to be strategic about how I heat leftovers!

    Look at you, so grown up and taking care of business! For overnight oats, try regular puree pumpkin, not pie filling. No sugar. Then add the maple syrup. My Overnight Oats pref is oatmeal, a big dollop of full fat plain greek yogurt, a big spoonful of nut butter, a squeeze of honey, and fresh fruit, like blueberries or sliced banana, then almond milk. Sooooo gooood and filling. Ps. Lasagna, chili, stews etc always taste better the next day. I am trying your veggie and quinoa salad for sure. Yum.

    Hi Caitlin! I have followed you since your college days :-) I will definitely be trying the Zucchini Fritters.
    About the Pumpkin Oatmeal… Should probably use Pumpkin Puree instead of Pumpkin Pie Filling
    I had just seen a TH-cam video with a recipe for pumpkin oats and was determined to find it, lol, so I could send it to you. In the process of looking…. I found some vegan recipes you might
    like from “High Carb Hannah” (yes, quite a few!) who I have also been following for a long time. I DID find the recipe for Pumpkin Oats from She’s in Her Apron” and have included the link and recipe below.

    APPLE OATMEAL
    1 large apple cut into small pieces
    1/2 tsp cinnamon
    1/2 cup oats (or more if you want)
    1 cup water or water thats been steeped in your fav tea
    1/4 cup soy milk
    2 tbsp raw buckwheat and coconut flakes
    2 tbsp maple syrup
    Add apple into a pan over medium heat with a little water and cinnamon and cook 3-4 minutes. (steep your tea while you do this)
    Next add in your water and oats and cook another 7-10 minutes or until the oats are as thick as you like and the apples are soft.
    Place into a bowl and top with the rest of the ingredients.

    1 cup steel cut oats
    3.5 cups milk (any kind) or water
    1 cup Pumpkin Puree (NOT Pumpkin Pie Filling)
    1 tsp pumpkin pie spice (or mix of cinnamon, nutmeg, ginger & allspice)
    1/4 tsp salt
    1/2 cup honey
    1 tsp vanilla
    Stir
    Cook overnite or 8 hours on low in crockpot
    Top with pecans
    ENJOY!!!!
