It's a mod that puts you on the same seed (world) as someone else and it's a competition who can beat the game the quickest. The seed is guaranteed to have some things necessary for a good speedrun but is otherwise random. When you win you gain elo, when you lose you lose elo.
best version to speedrun minecraft nowadays is 1.16.1 (though there's another categories for other versions which you can look into and see if you like them) and there's a lot of tutorials out there to help you speedrun minecraft nowadays
it's called zerocycle, it's been around since 2021, but it took a year or so for people to actually start doing it in runs. basically the dragon always flies to and circles 1 of 4 spots after spawning in, and if you can figure out which one it is and build up before it gets there, you can trap it and kill it with bed explosion damage/knockback. the reason you don't see it in most runs is that you need 5+ beds, full health, 2-3 pearls, a decent amount of building blocks, and an exposed end spawn to do it. in the wr, zylenox didn't have any pearls, so couldn't go for zero. it's also significantly harder than onecycle, and more punishing if you fuck it up. the current fastest time with zero is zylenox's 8:26

Each bastion type follows patterns for generation. The gold blocks will always spawn in the same areas, and depending on the bastion, either be guaranteed to spawn or have a % chance to spawn. Either way, the locations are always the same, so speedrunners memorize and route the bastions using those locations.

current wr doesn't use it because they spawned in the box, which means it's just barely too late to zero cycle the dragon
