The front wheel definitely brings it all together, love watching this bike evolve and get worked on. Such a clean looking bike and always good when it doesn't cost too much too. I love resuing bits.
Take a 1/2 tube 2 in wide. Weld to a pipe. Add a nut to the end of the pipe. Take a 2nd pope is the first pipe and nut fit into. Add a plate so the bolt in the lower pipe will not go up or down. Add a old ratchet and socket to the bolt and pipe. Cut a open hole for the ratchet. Add a plate to the bottom of the ratchet pipe. A bone bike jack. Use the cross bar on the frame.

Would you consider a narrower fork? It looks great, but almost too much space in-between the tire. Maybe a triumph front end. Relay at the headlight in the diagram
I’d get rid of that clunky rear brake pedal and fab one that matches the shifter peg. You could just saw off the pedal and weld a bracket on either the front or back side of the remaining arm whichever is more comfortable for you, then just mount a peg.
