Apple Pie for the 4th of July

  • This week on HLMW, we go full Americana and bake an awesome apple pie for the 4th of July. Nothing says America like Apple Pie.

    Happy 4th of July!
    Ingredients:
    (7 to 8 apples), Granny Smith (or Winesap, Braeburn or Honeycrisp)
    1/2 cup white granulated sugar
    1/2 cup light brown sugar
    1/4 teaspoon kosher salt
    2 teaspoons ground cinnamon
    1/4 teaspoon freshly ground cardamom
    1/4 teaspoon ground cloves
    1/4 teaspoon nutmeg
    2 tablespoons cornstarch
    1 tablespoon butter cubed
    1 egg
    Pie dough for top/bottom 9-inch pie, (chilled)
    Peel, cut the apples in half. Remove the cores with a Mellon baller tool, and then slice apple halves into thin slices. Place the apple slices into a large bowl.
    Add the sugars, salt, and spices over the apples, and then toss with your hands to ensure each slice is coated as much as you can. Set to rest for about an hour.
    Preheat oven to 400 degrees
    ASSEMBLE PIE
    Measure and add cornstarch to the apples. Stir to incorporate, then transfer the apple mix to the bottom crust. (Pour 1 cup of the juices left at the bottom of the bowl over the apples in the pie shell. Add chopped butter into cubes over the apples.
    Assemble the lattice and add to the top of the pie.
    Whisk the egg with a tablespoon of water, and then lightly brush the top crust. Then sprinkle with coarse sugar.
    BAKE PIE
    Bake the pie for about 75 minutes, turning a few times for even browning.
    The pie is done when the juices are bubbling through the vents of the top of the lattice. If you do not see bubbles, the pie needs more time.
    Cool on a rack until lightly warm
