  • In today's video I will teach you how to make Gourmet Sacolés that will leave your mouth watering. You will learn how to make 4 flavors of Sacolés using just 1 base: Passion Fruit Cream with Jelly, Nest with Strawberry Jelly, Pineapple with Coconut and Lemon Tart.
    In addition to teaching you the entire step-by-step guide to making Sacolés, at the end of the video I will talk about expiration date, storage, production tips and pricing so you can leave this video planning your production!

    ***GOURMET ICE CREAM***
    BASE RECIPE
    395g condensed milk
    200g of cream
    750ml whole milk
    40g of Ninho milk
    10g of Neutral Alloy
    PASSION FRUIT ICE CREAM WITH JELLY
    ▪ Passion Fruit Syrup:
    100g passion fruit
    150g sugar
    100ml of water
    ▪ Assembling the Passion Fruit Ice Cream:
    1/4 of the base recipe
    50ml concentrated passion fruit juice
    Passion fruit pulp crushed to taste
    2 teaspoons of passion fruit jelly in each bag
    NEST ICE CREAM WITH JELLY
    ▪ Strawberry Jam:
    500g of strawberries
    150g sugar
    half crushed apple
    ▪ Assembling the Nest Ice Cream with Strawberry Jam:
    1/4 of the base recipe
    2 teaspoons of strawberry jam in each bag
    PINEAPPLE ICE CREAM WITH COCONUT
    ▪ Pineapple in syrup:
    1 chopped pineapple
    200g crystal sugar
    ▪ Assembling the Passion Fruit Ice Cream:
    1/4 of the base recipe
    25ml coconut milk
    30g grated coconut
    2 teaspoons of pineapple compote in each bag
    LEMON PIE ICE CREAM
    ▪ Assembling the Lemon Tart Ice Cream:
    1/4 of the base recipe
    1 lemon juice
    6 Malted, Maria or Maizena biscuits, crushed
    * If you want to make an entire recipe for each flavor, multiply the flavoring ingredients by 4. Jellies and jams do not need to be multiplied, as they already have a large yield.
    ** I used 100ml of cream in each bag.
    *** I used a 5x24cm bag with 4 microns. The ideal is to use bags of 4 to 8 microns. Anything less and the bag is too thin and tears easily.
