As far as I remember, the PV does not go out of it way to target animals. Sure, animals and plants get caught up in it path at times, especially since Gabriel brought about the Red Tide, but otherwise, the PV is only interested in destroying humanity. This is seen with the Corrupted hunting down anything with human-level intelligence. I mean, the people living on Earth would have been screwed already if all animals get killed off. They wouldn't be able to hunt or fish otherwise.
