Just did it. Delicious! Didn't think it could be that tasty without oil. I'm no fan of rosemary, so I used nutmeg for the woody touch, and since I'm a big fan of the sweet onions and pumpkins flavors, I didn't put this time vinegar and pepper. I'll try next time, soon. This recipe comes with a big bonus(for me): No soap needed to wash all the utensils used, since there was no oil :-), running water right after every use and that's all. Subscribed. Kudos! Other lazy tips: my onions and pumpkin seem faster to cook, only 30 minutes. I chopped them into big chunks, not thin as presented. I used manual blender, that way I made it smooth in the same pan it cooked.

I'll admit, at first I was skeptical because I am used to butternut squash soup being drowned in almond/soymilk and loads of vegan butter, as a result I haven't had it for a while because of the high fat content. But your recipe was fantastic. The warmth from the cayenne, the subtle tart and sweet taste from the vinegar, the earthy rosemary and sweet squash. It was heavenly, I didn't miss the fattening additions one bit. Luckily I will have plenty of leftovers for the next few days since I made triple the recipe. My father and his girlfriend loved it as well and they both went back for a second helping :) Thank you for this amazing recipe.

I don't like rosemary I find it strong and overseeing but OH MY GOD YOU WERE RIGHT!!! I didn't have fresh rosemary so I used half a teaspoon of dried crushed rosemary so I couldn't remove it after simmering. I only made half a medium sized pot and oh my god honestly I didn't think rosemary could be so perfect in a dish!!! Well done and Thank you it really took it to a whole new level
I've made this today and it is really delicious, i added half a cup of canned tomatoes to the mix because my pumpkin was a bit too sweet and i don't like vinegar(also i tend to put tomatoes in everything:)). I love watching your videos
Love Kabocha! When I make this soup I use a little bit of orange zest. It is a nice touch to an already delicious dish. Thanks for showing us how to cut out the fat, without losing flavor. Love the channel!!!

Tried this tonight and it's really easy and delicious!!! I'm amazed by how little fat is in this soup. It's surprising to know no cream is need, not even oil when frying the onion, and still taste good. Btw I had no vinegar at home tonight so I omitted it, but still taste good, very thick and rich in pumpkin flavour!!

The one in the video is butternut squash. Green Kabocha unfortunately is not available at the moment as it is out of season (at least in my part of the world). If you do find it and it is ripe, I strongly suggest you to try it. From a chef point of view, Green Kabocha is by far the best and most delicious pumpkin available. Thanks again for your support :-)
Team Broccoli Ripe Green Kabocha has a dark green skin and makes a "special sound". Butternut squash must had dark creamy skin, not too light though, or the inside won't be as orange as it should. Unfortunately the best way to see if some fruits are ripe...Is to open them :-)

In regard to your question about the pumpkin: Unfortunately there is no specific way to know if a squash is ripe. Each squash has its own characteristics. Red kuri for example have a deep orange colored skin when ripe, whilst butternut squash tend to have e more hazelnut colored skin when ripe. I became vegan one mounth ago and i realy love my decision because it's more peacful and the food are even more healthier for example this soup that i will do it todaay for my diner !
Will it be ok to omit the rosemary? Also I read on your website that the vegetable stock could be substituted with water, However I am a bit curious if it would still give the same taste or if would it be less flavourful?
Good soup but I hate balsamic vinegar, and would leave the chile out. I am really experimental with soup but squash is always butternut squash with onion and carrot. I find it so warming and real comfort food for chilly evenings.
This is so simple yet looks so delicious. One question: is the 3pumpkin" you used called butternut squash in the US? I want to make it but don't want to buy the wrong vegetable!
Thanks! Oh yes, it is called butternut squash in the US too and it is the one I used for this recipe. The other pumpkin I mentioned in the video (my favourite one) is Green Kabocha, which is out of season now. You definitely what to try that variety if you haven't already, it's just sublime. I'm always scared of adding condiments to it, as it is simply perfect on its own! :-)
Thanks for your comment. Yes, you might want to try that as it is a very good combination :-) Soups in general are probably the most “dangerous” food to eat in restaurants. A few years ago I saw a chef adding 1 cup of oil to a single portion of soup, just to make it tasty- unbelievable!
so i pretty much made the same thing except that the pumpkin was mashed and not blended, the onions were put in after the mashed pumpkin and not blended either, i used thyme leaves and black pepper instead of rosemary. i also added in a can of chick peas. i'm now seeking a healthier alternative to chick peas with less carbs, sodium, ect. any ideas? the alternative doesn't have to be peas or beans.
+Miriam Ebony That's not a weird question, not at all! :) I've never tried to use canned pumpkin so I cannot be sure. Why don't you give it a try? If you like the taste of canned pumpkin I can't see how the soup could turn out to be a bad one. I hope this helps
I got rosemary but not whole, cut up. So removing it was very difficult; I just left it there and blended it together with the pumpkin...what I did, was it okay?

+Jody Pope The only problem with rosemary is that it is incredibly bitter, so you just want to extract the flavour from it. However, if you don't mind a bit of bitterness, you can definitely chop it and add it into the recipe; it will simply impart a stronger yet still delicious flavour to the soup. I hope this helps. It is not silly at all. How would you know the difference if you have never seen the two herbs together :-) When I was younger I used to believe that Parmesan cheese was a vegetable! You can surely use any pumpkin your prefer, but if it is a lot denser than the one we used, you might end up needing more stock. Regarding the dill, it is very different from the rosemary, but I'm quite sure that it tastes pretty good with the pumpkin, and I wouldn't be scared to try it :-) I hope this helps! Hi and thanks for leaving a comment. Sure thing you can! However, the only issue is that if you do the other way round you won't obtain a smooth soup, as only the cooked ingredients are soft enough to be blended so finely.
Groovyg I can assure you that it won't be the same thing, but you can of course try. Even if you manage to blend everything finely with a Vitamix of other powerful blenders, you will change the nature of the dish and the taste will be different too. When you blend raw ingredients together, they react chemically, creating new flavour compounds which are not created by cooking the ingredients first and then blending them. I can assure you it will be a different result, but I can't say if it will be better or worse :-) My pleasure, write anytime you want!

In regard to your question about the pumpkin: Unfortunately there is no specific way to know if a squash is ripe. Each squash has its own characteristics. Red kuri for example have a deep orange colored skin when ripe, whilst butternut squash tend to have e more hazelnut colored skin when ripe. I'm not an expert I'm afraid, but I hope this helps anyway. Thanks for watching ;)

Will it be ok to omit the rosemary? Also I read on your website that the vegetable stock could be substituted with water, However I am a bit curious if it would still give the same taste or if would it be less flavourful?
You can omit the rosemary and substitute the stock, but the soup WILL indeed end up less flavoursome.
Good soup but I hate balsamic vinegar, and would leave the chile out. I am really experimental with soup but squash is always butternut squash with onion and carrot. I find it so warming and real comfort food for chilly evenings.

This is so simple yet looks so delicious. One question: is the 3pumpkin" you used called butternut squash in the US? I want to make it but don't want to buy the wrong vegetable!
Thanks! Oh yes, it is called butternut squash in the US too and it is the one I used for this recipe. The other pumpkin I mentioned in the video (my favourite one) is Green Kabocha, which is out of season now. You definitely what to try that variety if you haven't already, it's just sublime. I'm always scared of adding condiments to it, as it is simply perfect on its own! :-)

Soups in general are probably the most “dangerous” food to eat in restaurants. A few years ago I saw a chef adding 1 cup of oil to a single portion of soup, just to make it tasty- unbelievable!
so i pretty much made the same thing except that the pumpkin was mashed and not blended, the onions were put in after the mashed pumpkin and not blended either, i used thyme leaves and black pepper instead of rosemary. i also added in a can of chick peas. i'm now seeking a healthier alternative to chick peas with less carbs, sodium, ect.
any ideas? the alternative doesn't have to be peas or beans.

+Miriam Ebony That's not a weird question, not at all! :) I've never tried to use canned pumpkin so I cannot be sure. Why don't you give it a try? If you like the taste of canned pumpkin I can't see how the soup could turn out to be a bad one. I hope this helps

I got rosemary but not whole, cut up. So removing it was very difficult; I just left it there and blended it together with the pumpkin...what I did, was it okay?
I just made this and it was soooo Good! I added some cream cheese and it made it even better, but then it’s not vegan anymore😅

does grinding the rosemary make any difference in taste ?
+Jody Pope The only problem with rosemary is that it is incredibly bitter, so you just want to extract the flavour from it. However, if you don't mind a bit of bitterness, you can definitely chop it and add it into the recipe; it will simply impart a stronger yet still delicious flavour to the soup. I hope this helps. Would dill and a japanese pumpkin work the same? How silly of me to think dill was rosemary!
It is not silly at all. How would you know the difference if you have never seen the two herbs together :-) When I was younger I used to believe that Parmesan cheese was a vegetable! You can surely use any pumpkin your prefer, but if it is a lot denser than the one we used, you might end up needing more stock. Regarding the dill, it is very different from the rosemary, but I'm quite sure that it tastes pretty good with the pumpkin, and I wouldn't be scared to try it :-) I hope this helps! Could you do it the other way round by blending the raw ingredients and then cooking it on the stove?
Hi and thanks for leaving a comment. Sure thing you can! However, the only issue is that if you do the other way round you won't obtain a smooth soup, as only the cooked ingredients are soft enough to be blended so finely.

Groovyg I can assure you that it won't be the same thing, but you can of course try. Even if you manage to blend everything finely with a Vitamix of other powerful blenders, you will change the nature of the dish and the taste will be different too. When you blend raw ingredients together, they react chemically, creating new flavour compounds which are not created by cooking the ingredients first and then blending them. I can assure you it will be a different result, but I can't say if it will be better or worse :-) My pleasure, write anytime you want!
