    Love kimchi. My soulmates aunt is Korean and when they asked what I wanted for Christmas I asked for her recipe. She showed up to my home with some she made, all the ingredients, & a recipe and gave me a hands on tutorial.

    Perfect timing,, garden planning is here for the up coming season and having end uses for produce is ideal. We never eat a whole batch but I do love gifting food.

    We eat kimchee almost daily! And I always have some kind of ferment going. Traditional Korean kimchee recipes are so much more involved that my perfectionism stopped me from doing it. But this is so doable! I’m going to try this now!!

    I haven't tried fermenting yet and I'm a little bit confused about when to use salt straight on the vegetables, when to use brine, Etc. I'm just going to keep watching these Fermented February videos until I get a little clearer

    I make a mock Kimchi that doesn't have fish sauce in it. I've never had the real Korean version to compare it to, but I'd love to see the difference. We eat our kimchi on nearly everything!

    I love the sound of cabbage when it squeaks!! I'm with Mr. Smith - Kimchi is wonderful. Kimchi fried rice, kimchi pancakes, kimchi on a spoon....😋 I'm going to give this version a go. I've made kimchi before, but it was more complicated - Korean radish, salted shrimp, garlic scallions etc. I don't have access to those items where I currently live, but I do still have some gochugaru in the freezer! Thanks for the inspiration!

    I had a love/hate for kimchi. We had Korean neighbors that used to bring it over for my dad. He loved it. I had a problem with the smell. To be fair I didn’t like fish in any form until I was in my late 20’s. I finally tried it again and I loved it. This recipe looks pretty tame with the fish sauce so I may have to try this one again. I will be brave and taste it if you. Lol.

    Thanks for demonstrating kimchi. I’ve eaten it and love it but never thought about doing it myself. You showed how easy it is to make - keeping in mind the safety importance. Thanks for talking about not using chlorinated water in fermenting.

    My late husband loved this i once made it on a regular basis but not like this, my recipe and I still have it somewhere was from his friend from Korea,, They were both Merchant Marines, Seaman. They made it right on the ships all the time. Might have to make it again thanks!

    Oh I just LOVE your bowls… so nostalgic looking ❤. I’ve tried store bought kimchi, I’m not real fond of what I’ve tried. But I really do want to like it and with this recipe I can adjust, add or leave out anything I don’t like so I can add this nutritious food to my diet.     I have tasted Kimchi that was way too hot! My Son in law loves it that way. I may try this as a surprise for him…maybe make a much milder version for myself , lol
