Some of it is chemically induced so it will harder all at once. Ever wonder how they can pour concrete in the winter considering the concrete is sopping wet? There are chemicals they put into the mix to keep it warm and when the lime in the concrete starts curing, it creates heat.....
I know it's not meant to be an insult but it really is because it's thousands of hours of hard work and dedication. As I type this you actually just addressed the time spent so cheers for that. Huge pet peeve for me.

I leant to do it as part of my job, even working upside down on a ceiling. It's not that difficult it's more about your own confidence and taking your time.

Oh for God's sake, how do you think these things were produced before the machines took over, incredibly by hand. luckily for us, there are these amazing craftsmen and women who keep these crafts alive.
In North America, all this work is done with foam indoors, plastic extrusions outdoors. it's sad actually. Most new houses are built with chipboard, particle board, plastic and tin and have the quality of an Ikea wall desk. They may look good, but they won't last 200 years. You can't easily repair an Ikea desk, same goes for all these new houses.
It's a bit more complicated, I'd say. Houses are definitely harder to work on, and definitely made of cheaper materials than they used to be, but modern construction techniques and newer materials mean that new houses require way LESS maintenance than they used to. It's just that when things DO start to go wrong, you're kinda forced to scrap the whole thing and start again. Cars are the same way now too! Older cars could last a really long time, but they required you to work on them frequently. Newer cars require almost no maintenance, but once things start to break, they're open impossible to repair. We've just transitioned into a throw-away society.
Simply going outside and seeing houses being built will show you that they aren't made of "tin, particle board, and plastic" like you say. Innovations allow us to not have to do the backbreaking part of it. The foam you see indoors in a type of insulation which is probably more efficient and effective hence why it's being used.
the difference is the attempt is to buy a house for life, unlike a car. On average any new house will start to deteriorate in 5 years (that's when you start fixing things up). Older houses (60+ y.o.) especially not in North America are built very differently (solid wood, full brick, stone) and last much longer before that first fixing up starts.
if done manually homes will cost a Trillion dollar, you better be thankful of the foam and fake work, it just need to last my your time beyond that you should not care :D
