Tyagiji, Jena is not telling the truth about the reason of keeping paddy in underground for few months covered by straws. This method is in vogue since time immemorial in Ganjam district in Odisha. This is done to 1. To safeguard the produce of the year against fire as previously there were too many thatched houses in villages which were frequently catching fire, 2. A natural process for heating the paddy which will increase the shelf life of the rice, 3. The process effectively reduces the sweetness in the rice which is present in raw rice kept above ground. 4. It almost becomes a version of par boiled rice even though it is raw rice and used for Pujas etc. The paddy is kept underground, called locally Khani (ଖଣି) during December to January after harvest and brought out at the end of May, before the onset of monsoon. UNFORTUNATELY, HE HAD USED THE TERM, VEDIC RICE, WHICH IS FAR AWAY FROM THE TRUTH. THIS IS TOTALLY WRONG. HAD VEDAS PRESCRIBED SO, PEOPLE OF UP, BIHAR, ANDHRA PRADESH ETC WOULD HAVE ALSO FOLLOWED IT. BUT THIS IS UNIQUE TO GANJAM DISTRICT. During the summer of 1992, there was massive incessant rain for more than a week in Ganjam district and all the paddy kept underground were destroyed due to seepage of rain water. Balram Jhakar was Agriculture Minister and he was surprised to see the process of keeping paddy underground. Because of the rain in 1992 and substantial loss, the farmers almost stopped this. Now very few do it for their own consumption only.
Really interesting and confusing also. In my opinion the leading rice exporter specially owner of leading Brands process their rice in different scientific techniques. Wish to hear more about our principal staple food, namely rice.
