With all due respect Paula if it’s a Holiday pork roast to be shared with a small gathering (emphasis on small in the year 2020) I highly recommend using pork shoulder. I especially love pork shoulder in the crockpot with a good quality barbecue sauce, The texture is so good it’s like eating butter.

Most of the recipes I saw for pork loin needed overnight marinading and/or 8 hours of slow cooking in the oven. This was a life saver for New Years..... Thank you.... It was wonderful. I always use Tony’s Cachere as my “house seasoning”.... Goes on everything but Chocolate Chip Cookies.

Sorry, my understanding of a pressure cooker, is, you don't stop the cooking process, and take the meat out. Then put it back in and cook it longer! There's instructions for how long to set the timer for complete tenderness! Sometimes I just don't understand why the way she now cooks?! But I still enjoy her and seeing the grand-kids!♥️

This technique works well, I used cider instead of water and added some aromatic vegetables to make the gravy richer.
