Caspar legumes:
Ingredients
1/2 Large Cabbage coarsely shredded
2 large Carrots, coarsely shredded
1 Handful of green beans, sliced
2 tbsp Salt
4 Tbsp vinegar
3 1/2 Tbsp crushed Mustard seeds
10 Garlic cloves, crushed
2 Tbsp Turmeric
1 Tbsp chilli flakes
7 Green chillies, chopped
1/2 Cup oil
Methods:
Washed and clean all the veggies cut or shredded coarsely.
Sprinkle the salt and vinegar let’s sit until it’s rendered all the water /liquid.
With a help of a cheesecloth or tea towel drained out all the liquid then add them to a large mixing bowl. To the vegetables add the mustard, turmeric, chilli flakes, fresh chilli, oil, and crushed garlic and mix until well combined. Reserve in a jar and keep in the fridge for up to 2-3 months.
