Can I ask why if one pack of yeast makes 5 gallons of wine you use the whole pack? I’m new to brewing in general and I see some people use the whole pack, some people use half and some use 1g? Genuinely curious about this.
You can use any amount of yeast. If you use a small amount of yeast it will take longer, but likelihood of a infection is higher. If you use a big amount of yeast it will be faster, but it might have a negative impact on the end product depending on the yeast and the conditions. Look up the directions for the type of yeast you are using. It might need specific nutrients and temperatures. Good hygine will also serve you well. Good luck
If you're using a hydrometer, you'd take measurements right before pitching the yeast, and then again when fermentation has stopped. Then, you can calculate based on those two numbers.
Surprised to see the grape juice, I'm not a fan. But to each there own, hibiscus tea is a great alternative in my experience. Really good looking kit, I wish this was available when I was starting out. Would have saved me a few years of making mediocre fruit wines for sure.

So, at what point in this process do I take measurements to determine ABV?
