During Covid we didn't go to any restaurants. Claudia taught me to make flour and corn tortillas, red and green enchilada sauce, refried beans and a host of recipes using all those components. Claudia enhanced our lives during a difficult time. As she says, "And, now, for the best part. The tasting!"
This lady has made our Mexican food to rival true Mexican joints. We found her during all the moronic shut downs of Covid. Our daughter in law is from Mexico and would come make dinners for us. Claudia is a gift. Her recipes are truly amazing! Ya gotta try them out.
