Sorry, but this recipe does not work. i tried it and noway the prawns ( shrimp) can be crispy . Furthermore your lemon grass cut up will ibe hard ven when cooked. Coat prawns separately with egg and cornflour then fry the ony way is to put the lemon grass to make a sauce by slowly boiling it and to simmer until its flavour comes out then add chilli and perpper nd acornstarch as thickener and that can be used as a sauce for the prawns

Your dish looks appetizing but Canola oil is no more considered heart healthy . Coconut oil, avocado oil or ghee are better options
