you may enjoy the Leuchturm journal. the pages are numbered and have an index at the beginning with a pocket at the back. the paper is quite nice and I believe it's the same size as the one you are trying out. they also provide stickers for the front and binding so you can date and archive them.
I know this video is a couple of years old, but... If you wanted to embellish the pages in your bound notebook, get a couple of rubber stamps and an ink pad to stamp your pages here and there. This would be perfect for you as you like monochrome color themes. (maybe consider brown ink instead of black?) I know there are plenty of stamps with images similar to the ones you printed. Also, if you like stamping, it gives your family something to get you as stocking stuffers for Christmas and Fathers' Day. Hope to see what you are doing for 2020.
