Mardi's Corn Cob Jelly Recipe
-Blanch 12 Cobs of Corn and Remove Kernels and freeze for later.
-In canner cover 4-5 250 ml jars with water heat to 180 degree simmer and keep hot while making jelly.
-Place cobs in large pot and cover with water, place lid on pot. Heat to boiling removing lid at that point.
-Boil for 30 minutes. Remove from heat and strain. Place liquid into clean pot stir in 2 tbsp Bottled Lemon Juice and 1/2 tsp butter.
-Wisk in Bernardin No Sugar Required Pectin thoroughly, bring up to a full rolling boil.
-Whisk in 1 Cup white sugar, again bring it up to a full rolling boil stirring until sugar crystals are dissolved (1 minute).
-Remove and fill 1 jar at a time. Fill up leaving 1/4 inch headspace using a wide mouth canning funnel, de-bubble Jelly and wipe top of jar with a cloth and vinegar before placing flat lid on.
-Place ring on and while holding jar finger tip tighten and a tiny bit more. Resist overtightening.
-Place jar in canner and continue until all are filled and place in canner. Store leftover jelly in Fridge.
-Make sure water is at least 1 inch over jars. Place lid on Canner and bring to full rolling boil. --Process 10 minutes (add more time for altitude). Turn heat off and let sit for 5 minutes, then remove jars. Do not tilt or wipe. Leave on flat surface 24 hours without moving. Store unprocessed leftovers in fridge.
