I have always found the food from mud dukkhans in rourkela, tatanagar ,haldia to be fresh ,tasty , economical and of course the street side food of Kolkata be it even my native Tamil cuisine to be tasting similar to original!!@!

Though consumption of very oily foods can certainly lead to hypertension, it is misleading to say that the food shown in this video leads to diabetes. And also high stress - sedentary lifestyle is always a negative factor for health irrespective of your food whether you like it or not.

Can you please post Dharamtola's "Mughlai Poratha" shops.? In the 1960's there was a Chinese Restaurant (Chung Wah) on Chittaranjan avenue. It was very famous for its Prawn Cutlet, Mutton Cutlet and Fried Rice. Chinese were also famous for their Leather Shoes.
Chung Wah is still there, near Chadni Chowk Metro Stn and on the main road....This is in fact, the 1st Chinese Restaurant in the entire Indian Sub-Continent, established in 1911 Sir. It is actually famous for their Mixed Chowmein Gravy, Mutton Cutlets [Chinese Style ofc], Golden Fried Prawns and Fried Roast Pork Chilly to name a few....

@Carnabwth the kind of food that this gentleman is preparing are not what you can learn at chef school or at a cooking school in my opinion. These are mostly his recipes of some Indian and Indian Chinese staples. If you would like to learn how to make them search for individual dishes on TH-cam like Indian Chilli Chicken etc. just a word of advice, a lot of the taste in these dishes come from being cooked in bulk, being deep fried in cheap oil and using condiments like ajino moto so you might not be able to recreate the exact taste at home. There is a reason that India has an obesity and cholesterol pandemic amongst its people, and a diet of these kind of foods is high up there.

If these street chefs are able to speak English I wouldn't be surprised if they would allow someone to spend some time with them learning especially if they benefitted financially for it. I actually did that 10 years ago in China. I learnt how to make the Chinese Hand pulled noodles. But to my disappointment, they use a chemical in the dough which isn't allowed to be used in the UK in edtible products. I need to visit one in London to see what they use.....if I would be able to get that information from them of course. This food certainly looks nice.

But again to your point, some of the ingredients that they use might not be legal or healthy for consumption. So in my opinion learning them off course has its merits and the sense of achievement of creating these dishes. But even with that knowledge the taste might not be the same. At the end of the day in simple terms a recipe is a series of steps almost like a science experiment but here, the so called chemical agents used (pun intended) might differ from what you have available and hence the final results would also differ. And finally I admire your tenacity and drive to learn dishes from various cuisines whether it be for passion or profession.
