Since you know that no where in the UK makes proper tortillas, maybe you start your own Tortilleria…? Anytime something is missing from the marketplace it seems logical especially since you seem to be dishing them out in peak form, I’m sure partly due to your travels to TX to experience (which others may not have been willing to do). Just a thought man, there are many in the US and they always dish out the best.
Don Juan El Taco Grande at Juan in a million is the BEST breakfast taco in Austin, in my opinion. The ingredients are so simple but just taste so good. When I make it a home, it is just not the same. No idea what they do differently as all it is is just an extremely generous portion of tortilla, eggs, bacon, potatoes, cheese. Great video!
Most H-E-B grocery stores here in Texas have butter tortillas made fresh in the store. They are so good you can eat them plain. I use them to make breakfast tacos, brisket tacos, pulled pork tacos, birria, and whatever other meats I can stuff in there.

Here in the Great White North we love maple. If you want to make maple bacon, substitute maple sugar for brown sugar, and add a 1/4 cup of real maple syrup to the cure mix to form a paste. After the cure time smoke with sugar maple at 200 deg. until 145 internal. Cool to room temp, wrap tightly in cling wrap, and refrigerate over night.
Looks fantastic, really solid looking breakfast taco! If you want to amp up your bacon even more. Coat the thick cut bacon in seasoned flour then cook in the oven @ 350 on a rack until golden brown. It will make the bacon have a chicken fried steak breading on the outside and really crispy. Really worth a try.
Everything about these looked good! Especially the tortillas. I hate getting those thick flour tortillas like they just bought them at the supermarket.

The owners of the cafe I work at are from Austin and so we have ‘Austin breakfast tacos’ on our menu. They include flour tortillas (not homemade unfortunately), eggs, New York strip steak, avocado, onion, cilantro, pepper jack cheese, and the green salsa and a red salsa served on side!

Your tortillas look like those frozen chapatis that you can get at Tesco here in the UK. They are darker but I think that could work as they cook on an oilless pan; if you don't want the faff of making them?

I’m not joking or making fun either. Every now and then you get a person who pronounces a word or phrase in a different way than your use to hearing and a lot of times it sounds a whole lot better. I planned to go to Juan in a million when i was in Austin in May, and i just never made it. Its at the top of my list for my next trip!

I always use Organic Maple Syrup (1/2 cup) to my 4 # belly for the cure. Love the sweetness and smell while frying 😊👍👍
