@@DetoxinistaRecipesthey seem to cook just fine without boiling. I did find out potatoes are high in oxalates and of course solanine but I wonder if soaking them first helps with both. Oxalates aren't removed at all from the oven but skinning them first would remove about 50% of them. I made them twice like this and it worked well I think. Boiling takes 45 minutes and makes them too mushy just for a 30-80% removal of oxalates and a complete solanine removal. I think skipping it is ok. Just make sure to eat enough calcium to compensate for the oxalates.

I have frozen fries I did that I wash my fries In a cold water bath , for 5 or more minutes and I dried all my fries out with a paper towel over them
This recipe works great. Celery salt is really good on fries!
