    I bought a pot from Amazon after your last video and I’ve made it twice. The chicken was great but I got the beef too spicy for my family. I enjoyed the vid.

      They key is in taste testing slowly while adding in spice! problem being that the cooking length will decrease the heat! So add early and taste often!!

    Andre, I love the T! I'm not sure if my daughter ever felt like that about me, but she used to steal my favourite fleece and my favourite sweatshirt when I wasn't looking and sleep on top of them! She's in her 20's now and doesn't do that anymore, but she still insists on putting a favourite toy under her bed that I convinced her would protect her from the monster under the bed. She was a delight as a youngster, but honestly she is a bit of a pain in the arse since she grew up! Good luck in the next few years!

    I lived in South Africa for a couple of years and ate dinner with dozens of South Africans. I never got to try potjiekos. Clearly life is not fair.

    You got a new subscriber, Love it. TH-cam sometimes surprises with such rare finds. I have one query. I make vinegar and other from my meads and wines. Is there a possibility that I can use my home made vinegar instead of the the store bought white vinegar? Is acidity an issue as home made wine vinegar does not have that bite of a white vinegar?

      You can use your own vinegar (I am guessing you are talking about making hot sauce?). Just measure the pH of it with a cheap pH meter.

      It turned out great! My family was a bit skeptical but thay all asked me to do it again. Oh and I did it over wood coals.

    Before jumping and buying a potjie...start off cooking over a stove top with a basic pot or cast iron...and learn..and feel the temp out...and progress with each cook..

    Hi Big fella. I could do with your advice if possible. I live in the Med (Balkans) and ive just recieved 30 reaper seeds (well thats what I am told they are). Ive got plants out in the garden but I really want to get a few reapers going and let them slowly tick over during the winter in the house. Its boiling hot here so great for getting them going indoors. Is there a few easy and simple things I can do to keep them happy between November and March. I am very restricted on what I can buy re heating matts and special lighting so i need to be creative. Any help or advice would be greatly appreciated. Regards. Nathan

      If you don't get frost's, then nothing special to do. Just reduce the amount and frequency of watering during the colder months.

      @@ChilliChump thanks mate. I have small windows so light upstairs will be a real issue. Can I use normal fluro tube lights on a timer to give them reason to live or is there somthing a bit more complicated involved?

    Always add 4 too 6 crushed gemmer koekies into any potjie you make....taste good and thickening the gravy.

    That amount of salt is perfect when it comes to kids. Got my Garlic Fire sauce I wanted to properly try before commenting. Its pretty good, with the Scorpion being very front and centre. Can I suggest you roast the garlic first? It's not strong enough for me, I love garlic! Would also like to taste the reaper it has a better and more unique taste than the Scorpion which is widely available. Apologies for the constructive feedback but I feel its better than saying nothing and not buying anything else. Good video 👍

      Thanks for the feedback Stu. Part of the garlic was roasted, part was fresh, and the rest was my black garlic. Like I mentioned in the video where I made it, it definitely can use a lot more garlic. The pungency of the chillies kind of takes over. And with regards to more Reapers, certainly a possibility. But sourcing extra fresh Reapers, they are double the price of Scorpions. So I would need to take that into account.

    I would substitute the Worcestershire sauce for Henderson's Relish (Sheffield), if you appreciate the finer thing's in life.

    Hi! Im trying fermentation process for the first time, and i can’t tell if its wrong or not. I put onions, garlic and sweet peppers with the chillies in a jar, and cover the veggies with plastic bag. After 9 days on the surface of the bag i can see some brownish color or something. The veggies looks fine i think they are bright. I dont know how is it supposed to smell, its like oniony but bad for me i dönt know. Can someone help me to Tell if its good or bad?!

      Not an exact recipe, i made a 3% himalayan salt brine, 3 garlic, 1 onion on top, a half sweet pepper and some cayenne and birds eye. Sorry for bad english...

      And how are you keeping it airtight? Are you using an airlock? Or is this a vacuum sealed fermentation?

      I know its not the best way but i put a plastic bag on top of the veggies and put the lid on and closed it half so the air could come out and i covered it with paper towels and rubber bands.

    My first potjekos was a total failure. Standard Polish recipe, but totally overcooked. The red bottom shining pot at the lakeside shore burnt fire quarelled with sunset, who is brighter! My friends were laughing: „Shine on you crazy diamond!” Never again! Potjekos, in Polish „duszonki” demands the care!

      Never tried the South African or Polish recipe, but I've tried many different recipes for the first time. About half have come out right, and the rest have been totally awful. I guess it's just down to your own experience with flavour , herbs and spices.
