    𝗦𝗢𝗨𝗧𝗛 𝗜𝗡𝗗𝗜𝗔𝗡 𝗦𝗧𝗬𝗟𝗘 𝗣𝗔𝗡𝗘𝗘𝗥 𝗠𝗔𝗦𝗔𝗟𝗔
    Preparation time 10 minutes
    Cooking time 20-25 minutes
    Serving 2
    Ingredients
    For Ginger Garlic Paste
    1 inch Ginger, slice, अदरक
    5-6 Garlic cloves, लहसुन
    1 Green chilli, हरी मिर्च
    Salt to taste, नमक स्वादअनुसार
    For Masala
    1 tbsp Fennel seeds, सौंफ
    ½ tbsp Cumin seeds, जीरा
    ½ inch Cinnamon stick, दालचीनी
    2-4 Cloves, लॉन्ग
    Salt to taste, नमक स्वादअनुसार
    For paneer Masala
    1 tbsp Oil, तेल
    1 tbsp Ghee, घी
    1 Star anise, चक्र फूल
    1 sprig Curry leave, करी पत्ते
    1 tsp Cumin seeds, जीरा
    Prepared Ginger Garlic Paste, अदरक लहसुन का पेस्ट
    4 medium size Onion, chopped, प्याज
    1 tsp Coriander powder, धनिया पाउडर
    1 tsp Guntur red chilli powder, गुंटूर लाल मिर्च पाउडर
    4 medium size Tomato, chopped, टमाटर
    2 Green chilli, chopped, हरी मिर्च
    Little water, पानी
    Prepared Masala, तैयार किया हुआ मसाला
    1 sprig Curry leaves, करी पत्ते
    Fried Paneer, तला हुआ पनीर
    1 tbsp Coriander leaves, chopped, धनिया पत्ता
    For Paneer Marination
    400 gms Paneer, cubed, पनीर
    A pinch of asafoetida, हींग
    ½ tsp Turmeric powder, हल्दी पाउडर
    A pinch of degi red chilli powder, देगी लाल मिर्च पाउडर
    ½ tbsp Oil, तेल
    Oil for frying, तेल तलने के लिए
    For Garnish
    Fried curry leaves, करी पत्ते
    Process
    For Ginger Garlic Paste
    In a mortar pestle, add ginger, garlic, green chilli, salt to taste and make a smooth paste out of it.
    For Masala
    In a non-stick pan, add fennel seeds, cumin seeds, cinnamon stick, cloves, dry roast on medium flame.
    Transfer it into a bowl, add salt to taste once it cools down, grind it into a fine powder.
    For Paneer Masala
    In a deep bottom pan, add oil, ghee once it is hot, add star anise, curry leaves, cumin seeds and let it splutter well.
    Add prepared ginger garlic paste and saute it on medium flame until light brown in color.
    Add onion and saute it well. Add coriander powder, guntur red chilli powder and keep sauteing until the spices turn aromatic.
    Add tomato, green chilli and saute it well until tomatoes turn soft.
    Add little water and cook on medium flame for 5 minutes.
    Add prepared masala, curry leaves and mix it well.
    Add fried paneer and mix everything well. Simmer it for 5 minutes.
    Add coriander leaves and mix it well.
    Garnish it with fried curry leaves and serve hot with roti.
    For Paneer Marination
    In a bowl, add paneer, a pinch of asafoetida, turmeric powder, a pinch of degi red chilli powder, oil and marinate well.
    Heat oil in a non-stick pan, add marinated paneer and fry for a minute to make sure all the sides are cooked well.

    I live smack near Gunturu. The chilli thing is soo true. All the Aavakaya ( Aam ka Aachar) that we make, it's absolutely incomplete without Gunturu Mirapakaya/mirchi. Summer holidays at Granparents' house is basically running around the house but staying away from the kitchen because there's loads of guntur mirch waiting to be made into Aavakaya

    I'm from Andhra Pradesh, but lived most of my life in Patiala! I love your channel. Being able to learn other people's ways of doing things is an indication of having a broad world-view. Also I had never heard of this dish despite being from Andhra. But then again, India is so vast and diverse, there are always new things to learn.

    As a 10 year old kid when I first went to Hyderabad I was sooooooo happy to find Curry leaves tree 🌱 . It was a self discovery 😅😅 And this tree smelled of sambhar which I LOVEEEEDDDD 😋😋😋😋

    Incidentally *Ranveer ji* I was born in Vishakhapatnam , AP n so very fond of Spicy food. My Mom used to make the most amazing Pickles. Spicy n Yummy. My Dad was with Hindustan Shipyard n we stayed in Vishakhapatnam till 1969. Then shifted to *Bombay*
    I still have wonderful memories of my Birth town.

    I have lived in tamil nadu and andhra. I can tell you the spice mix is spot on. fennel+clove+ cumin+cinnamon+curry leaves. I have been trying to recreate this flavor since sooo long.

    Curry Patta or Curry leaves is also an integral part of Assamese Cuisine. In Assam its called Narasingha (Same name as that of the avatar of Lord Vishnu)

    I am a North Indian who got married to a Guntur girl and settled here in Guntur. You are Obsolutely true about the celebration of Mirchi in Andhra, especially Guntur. More and more respect and love for you Ranveer paji. Recipe ''Adirindi'' which means ''hiladiya'' in Telugu.

    in south India curry leaves are very important when cooking any dish. my mom does this too 1/2 of curry leaves when tempering and other 1/2 when letting the dish boil she says it enhances the flavor of the dish and is good for health.

    Wow !!
    Amazing Dish.
    Must try it at home.
    Hubby n I are very fond of *Paneer*.
    My Doggy *Gypsy* used to love it a Lot. Infact we never used to get to Eat it from our plates. She used to come to each one of us to Eat up All the *Paneer*
    Miss her so much.
    She just expired on *5th August* Age 13 years. Breast Abscess.
    Now whenever I eat *Paneer* I will remember her again n again. 😔

    Curry leaves thok ke, my Scientist Chef Ranveer aur Meri Andhra ki Monopoly ye hai, ki 4 glasses paani lekar jarur khane ke liye baithna!!
    Oh God! Jab Meri transfer Vizag Hui thi, tab Telangana alag nahi hua tha, my my, I ate the thali over there n it was so spicy, n I learnt from there how to cook food with different types of red chillies!! Food of Our Indian states are unique n we won't get it anywhere else! This is how by traveling to different states of our country, I learnt cooking varieties of food n I love cooking, that's my Monopoly Chef!!!No doubt, I am very busy , but I give my 100% while cooking bcox that's how our family relish the food we make.
    I loved the way u cooked Paneer masala of Andhra style, but I do add poppy seeds bcoz it is available throughout the year in my home.
