A simple recipe for delicious Salt and Pepper Calamari.

    Join our very talented Executive Sous Chef Joseph Severini Malasi as he shows you how to prepare this dish at the comfort of your home.
    Ingredients:
    500g Baby Calamari
    30g Corn flour
    5g Salt
    15g Pepper
    Piquante Sauce
    5g Jalapeno
    20ml Tomato ketchup
    2ml Tabasco
    8g Cilanto
    2ml Lime Juice
    10g Onion
    3g Salt
    3g Pepper
    Preparation:
    1. Clean the calamari tubes, split in two and score the tube to fan while cooking.
    2. Season the corn flour with salt and pepper
    3. For the Piquante sauce, fine chop red onion, jalapeno and mix with tomato ketchup, lime juice and cilantro. Check seasoning.
    4. Coat the Calamari with seasoning flour and deep fat fry until the calamari is crispy.
    5. Note: Do not over cook the calamari for it tends to become chewy.
    6. For the piquante sauce mix all ingredients together and check on seasoning.
