....I use some shredded Colby Jack in my Enchiladas, even if it's a Beef Enchilada..I also add a small amount of diced Green Chikes ( canned). to the meat mixture and a tablespoon of Chix.bullion Powder... many Dishes such as this benefit from the addition of the Chix Bullion Powder. I use Colby Jack ,with Sharp Cheddar for on top ,because Colby Jack is a great " melting cheese. " I always serve Enchiladas ( whatever kind ) on a bed of chopped greens( iceberg/ romaine ) with a few halved cherry tomatoes on the side, near the greens. I learned this , serving Enchiladas on a crisp bed of greens, working in a Mexican Restaurant, when I was 14. 🙂 It really adds " freshness " to the dish.

Seems kind of a messy way to do it. I put the enchilada sauce in the bottom of the pan and I roll the enchiladas on a dry countertop and then I pour sauce over them so that way it’s less messy
