    I never knew that you can make it as spreadable icing consistency. I just always use this technique for drips cakes. My husband's birthday is coming up this month. I plan to use the spreadable ganache technique.

    How can I get true royal blue colour as it turns greenish when I use a royal blue food colour because the ganache is pale yellow to start with.

      Hey there! Ok, so the trick here is to do a bit of color correction.... We know that yellow plus blue makes green, right. We want to neutralize the yellow, and to do that we add a bit of purple/violet coloring IN ADDITION to the blue that we're using. Be careful and add the purple/violet a little at a time! Let me know how that turns out. 😉

    Do we have to refrigerate the ganache for 24 hrs or keep it outside to attain a thick consistency thanks for the video very informative

      I leave mine at room temp to harden, but you can refrigerate ganache and should if you live where the climate is very humid. Make sure that the refrigerator is cool; not cold! Thanks for watching!

    Hi Asia,
    I want to pipe roses and mums onto cupcakes, do you think it’s possible with this ganache? Should I whip it?

      Yes, you can definitely pipe flowers such as rose and mums with ganache! However, I would not whip it. The more air you incorporate the more potential of air bubbles in your icing, causing holes in your petals and possible blow-outs while piping the flowers. I would make the ganache the night before and give it time to set, instead of whipping it to speed up thickening. Best of luck on your cupcakes!

      Yes, to make the dripping consistency you follow the same steps. The difference is that you'll want to wait about 10 minutes so that the ganache is not too runny or thin. I hope this helps. Thanks for watching!

      Those are good questions! I never frozen my ganache and I’ve never refrigerated my ganache beyond a couple of days. Tell me more: What’s your timetable? What are you making?
