Just mix 3 tbsp of vinegar, 2 tbsp of soy sauce, 1 tbsp of raw white or brown sugar, a tbsp of ketsup, dash of ground white or black pepper in cup of water and you need a little conrstarch slurry for making the sauce thicker. Boil the mixture in a pot and taste it at your taste bud like is it fine for sourness and sweetness, you may adjust the flavor by adding sugar or vinegar and add the cornstarch mixture gradually while stirring to consistency. Enjoy! 🙂

We boil the ingredients first( sangkutsa) then just after the meat became tender then that’s the time when we saute the whole meal with another set of onion and garlic. Bulakenyo’s don’t put sugar and raisins in menudo and giniling (minced pork) etc..menudo for us have all these ingredients,pork meat, bell pepper, bay leaf, onion and garlic,margarine, black pepper, calamansi, soy sauce, cheese, hotdogs, pork liver and liver spread..When I’m studying in Manila I’ve learned that most of the food in Manila are sweet and doesn’t fit my taste buds.
For noche buena, the chinese ham is the most popular dish, the most popular ones are from Excelente Ham and Majestic ham. Cant compare them to the Purefoods fiesta ham and the other so called xmas hams out there
