You want to avoid selling to any middleman. Selling to the end user/collector makes the most sense because you get the end price. A broker pays you as little as they can get away with so that they can sell it as high as possible and make mega profits. That’s their job.
What a broker offers, though, is a quick and easy transaction. They have way more connections and a bigger platform for selling it than you do. It might take you a long time to find the person who will pay top dollar.

    Jimi Hendrix’s 1968 Fender Stratocaster
The white 1968 Fender Stratocaster that Jimi Hendrix famously played at Woodstock in 1969 was purchased by late Microsoft co-founder Paul Allen for a cool $2 million (£1.65 million) in 2000. Keen guitarist and collector Allen, who passed away in 2018, donated the fabled instrument to the Museum of Pop Culture in Seattle where it's still on display today.

It's not a low ball. It's just a pawn shop being a pawn shop. They totally validated the value of the guitar at 750 to a mil; they just can't pay that because their job is buying low and selling high. If you think getting 2/3rds of what something is worth is an insulting low ball, you don't go to a pawn shop. Unless that pawn shop gives cool free estimates and puts you in a TH-cam video in a popular channel. What the guitar is worth is what the pawn shop thinks they might be able to get as a retail price. You, the supplier, have to accept a wholesale price.

You might if you wanted to sell it privately. Being on the show is free publicity and also helps cement then understanding that the guitar is authentic. Even if the guitar went for a million dollars at auction, which is a big if, then the seller would only earn $850,000 after they paid the commision. By asking $750,000 he didn't want Ric to buy it, as it would have been a bad risk for Ric. So my guess he had some buyers and wanted to sweeten their offer by bringing it on the show.
