Is there a textbook that I can consult for the concepts related to probability that he is covering in this lecture and next one?

This course does not follow a particular text. See the course syllabus for the list of references at: ocw.mit.edu/courses/physics/8-333-statistical-mechanics-i-statistical-mechanics-of-particles-fall-2013/syllabus/. Best wishes on your studies!

Any standard book on probability will do the job.

@nathanlackey3918 the MIT account responding to you was wrong. He is following along his textbook he wrote almost identically. It's very useful to follow along with these lectures when you have his book on hand. It's called " Statistical Physics of Particles" by Mehran Kardar.

the prof has a massive knowledge, he barly look at the papers, but I have to say that his lectures lack something essintial in teaching, can't put my hand on it, but there is something missing in his style of teaching, I feel like reading a textbook, it lacks a teacher.

I don’t think this prof changes clothes and the cameraman is either an infant or totally blistered

It was an absolutely great lecture, but one of the worst and head-hurting camerawork ever for someone taking notes. Get a wider shot and stop chasing the professor, this isn't an action movie!
