🌼Enchilada Casserole (fits in a 9x13 casserole dish)
-1 lb of lean ground beef
-1/2 a yellow onion chopped up
-1 tbsp of minced garlic
-1 (15 oz) can of diced tomatoes juices included
-1 (10 oz) can of red enchilada sauce
-1 cup of frozen corn
-1 (15 oz) can of drained and rinsed black beans
-1 package of Knorr Taco Rice
-1 cup of water
-1 tsp of garlic powder
-1 tsp of cumin
-1 tsp of chili powder
-1/4 tsp of pepper or to taste
-1/4 tsp of red pepper flaked (optional)
-1 to 2 cups of shredded mild cheddar cheese
Bake on 375° for 15 minutes!
Top with sour cream!
🌼Pizza Casserole (fits into a 9x13 dish)
-1 lb of lean ground beef OR italian sausage
-1/2 a yellow onion chopped up
-1 tbsp of minced garlic
-1/2 cup of beef broth
-1 (24 oz) jar of marinara
-1 tbsp of Worcestershire
-1/4 tsp of red pepper flakes (optional)
-1 tsp of oregano
-1 tsp of basil
-salt to taste
-1/2 tsp of garlic powder
-1/4 to 1/2 cup of shredded parmesan cheese
-10 oz of pasta, any shape//kind
-1 to 2 cups of shredded mozzarella cheese
-1 package of pepperoni, layer over the top and if you want to you can chop up some more of the pepperoni to mix into the pasta
-2 tsp of parsley over the top
Bake on 375° for 20 minutes! Broil 2 to 3 minutes to crisp the pepperonis up!
🌼Chicken and Potato Casserole (fits in a 9x13 dish)
-6 russet potatoes, cubed into bit size pieces skin on or off
-3 tbsp of avocado oil or any cooking oil
-1/2 to 1 tsp of salt
-1/2 tsp of paprika
-1/2 tsp of onion powder
-1/2 tsp of garlic powder
-1/4 tsp of pepper
----
-2 chicken breasts cut into bite size cubes
-1/2 tsp of paprika
-1/4 tsp pepper
-1/2 tsp of onion powder
-1 tsp of garlic powder
-1/2 tsp of salt
*after cooking chicken before adding cheese you can taste and check if any extra seasoning is needed for your own families tastes!*
-1 to 2 cups of shredded mild cheddar or sharp cheddar
-3 slices of bacon chopped up or bacon bits
-2 tsp of parsley over top (optional)
Bake potatoes on 400° for 15 minutes. Then add chicken and bake another 20-ish minutes until the chicken is reaching 165°F!
Top with sour cream and chives! Served with peas!
