The dude on the iPad is the composer himself for the OSTs in this video. Yu-Peng Chen isn't part of HOYO-MiX anymore sadly, but the team still has more incredible talents like him.
I think the “timer” you were talking about actually is a beat-counter and for every 4 beats, it raises a number which indicates which bar you are at. Especially for longer or really complex pieces, this can be a real life-saver
"Lamentation et Triomphe" from Genshin Impact a live Orchestra (Fontaine OST). If you havent watch that yet, then i can really recommend this one. In my opinion it is one of the best orchester presentation they have made!
You’ve reacted to sooo much of Genshin so it definitely makes sense to lessen the frequency to let them build up some more stuff for you to see. I definitely agree with the music, it’s so amazing how important it is and how someone may not even realize it’s there, but the moment it’s gone it’s extremely noticeable. As for other videogame OST’s for you to listen to I HIGHLY recommend listening to some stuff from the Xenoblade Chronicles series of games. The title theme for Xenoblade 1 is INCREDIBLE and would be a great place to start!
You should watch all of the lantern rite cut scenes. There is four of them so far since it's a limited time event celebrating the Chinese New year. Each of them are really enjoyable to watch, especially the one from 2022
There are indeed types of microphones for instruments but usually these are for instrumental solos for pieces like this where the solo needs to be heard at a certain level compared to the whole ensemble. The sound paneling here is for helping to shape the room by having the sound bounce off of the panels so you can hear the instruments in the back at the same level as those in the front no matter where you are in the room.
in the Genshin Album "Jade Moon Upon A Sea of Clouds" there's a song called "Liyue" and it's the BGM that plays during daytime when you're in... Liyue! and it's my favorite music in all of Genshin Impact and the other one is Let's Go, Crimson Knight! (Klee OST)
People have been asking for concert and hoyofair reactions for a while now. I doubt it will happen sadly. People already gave ideas on how to cut up the content since he seems hesitant on making longer videos.
It's unfortunate. I wish more creators would react to it, but unless most do it then there's a high chance none of them will. You'd have to find someone who genuinely love the game to the point that they'd play it without views but that's rare. It's not totally his fault. He does have a family to support.

Just a suggestion for Genshin thursday: react to all the interviews of the JP cast, they are really interesting (especially Jean), then there are the anniversary messages that they recorded for each year, I remember I found them subtitled. I know you are against playing with JP voiceover but those can give more life to the characters, something I can't hear in the en voiceover.
