Adding in here by someone who eats cattails. When you collect the male pollen spikes (in Ohio from late May to late June), if you can harvest them while still in their leaf sheaths, that much better! Like corn, once they have erupted from their leaf sheaths, they dry out and go to pollen much quicker. They are still edible unless they're very soft. That's when they're entering the pollen stage. As mentioned in this video, the sheathed pollen spikes are *HARD* to see. You need to get close to the plants to see them. When you harvest them, face towards the sun so you can see the separation between male spikes and the female flower spikes and cut the stem in between, but DO NOT peel the male spike until you're ready to cook them! Keep them refrigerated in-husk to keep them fresh! Narrow leaf cattails go to pollen spike a bit earlier than the native broad leaf cattail, therefore you can enjoy the spikes a bit longer. The female flower spike IS edible, but it's so very thin in the edible stage that it's useless to harvest them. I boil them for 5 minutes, melt real butter and season with sea salt, dip and enjoy!
Yes, but it takes me a long time to film (I want to show the plants in different stages of growth), and edit. so I hope you can be patient. Probably I'll post a new one early spring 2019.
The gel sometimes drips off when gathering young shoots. When shoots are higher, you can pull the leaves toward you (of plants that are about 1 -2 free high) and the gel will be in their bottom parts. This won't be available in late fall or winter. Best time is in late spring/summer. Collect gel in the above ground parts of the plants. Not sure how long it will last--best to refrigerate it if you plan on keeping an amount of it.
i saw a YT video of people doing that--must have been a joke (?) as when the female is brown it's full of cottony fluff. Well who knows? Maybe if you get them when they just turn brown? I have no idea...

I agree with all you say. Many folks say the females are edible but they have so little compared to what the males have to offer.
