From NZ, where a South African friend introduced me to the joys of biltong, something that doesn't appear on the National Menu. However, that short-coming is slowly being rectified by S.A. folk who come here to live. So I made a drying box from totara wood with a cheap $5 fan from a chain retailer. I live in the warm and humid part of Northland so a dehumidifier in the room helps speed the drying process. Your video is a cracker!
Dude.... I have watched about 50 videos on how to do this, and this is the only video I have seen that looks real! You just chop big thick slices, love it, you don't use some premade spice, perfect... I have a question, you don't add sugar, every other blend had brown sugar! Do you do this as personal preference?
Hey, thanks for the comments, this is my recipe as I like it. I dont use any sugar. In my new spice mix I have started adding some cloves. I will make another video with this recipe in the next few weeks.
Brilliant bilting box ! Why have I just bought a dehydrator ?! From the UK- how long would you expect your biltong to last ? Or do you freeze it in parcels or whatever ?
That's right, I make about 5kg at a time = around 2.5 to 3kg biltong once dried. I freeze half, don't event bother vacuum sealing it, just wrap in plastic well.@@DeeTee79

If you vacuum seal Biltong it can last for months in the freezer

I in UK, I have tried a box like the home made one, the uk is too humid and a box like that will take ages to dry. I swapped to a dehydrator
@@Bugzy83 a box like mine will be fine if you add a light, the bulb will dry the air. No problem to make biltong

Which cut were you using?
I use cheap cuts with a bit of fat on them, at my butcher I get beef chuck cuts which is from the neck of the cow. I usually buy around 6kg at a time
Is it a special type of light or just a regular bulb?
It has to be an incandescent bulb to produce the heat needed. LED bulbs do no work

I had over 6kg meat, it came out spectacular. Just could have used a bit more salt.
People DO NOT USE APPLE CIDER VINEGAR!
Any vinegar works, I use what I have lying around. This was the best batch I ever made and I have tried countless other versions.
