On the potato casserole i have a recipe that i have used for 40 years the topping has corn flakes smashed in bag then mixes melted butter in them and then put them on top of potatoes last 15 min at 375 until they get a little brown. Makes a big difference .
I estimate a total of 316 g fat and 3,000 calories just from fat for this entire dish. Then there's the sodium. And other stuff. A cardiologist might let you have a quarter cup once a year.😂
On that mac and cheese.. You might could use two cups of milk and one cup of heavy whipping cream. Just my opinion but I think it might not make it as watery
Charles, do you really think that you "came up" with the idea of putting a large sheet pan under a full sheet pan of a liquidy recipe to prevent overflow. What would we do without your level of expertise?

I’m pretty sure ewe learned this method from someone else, as ewe surely did not invent this eh? The instructions were for those who did not know.

When I have made this ,I put my cream of chicken soup in with my chicken broth works just fine 👌 and you can use can chicken to it works great too 👍

There are still people who might not have thought of it ,so if you knew great but a lot of people don't do much cooking or baking. So it was for them.
It gives the metal pan stability when placed on a sheet pan.
