Nice Vangibath Shyla. I am from Bangalore. It's very common dish in Karnataka. Generally, it is prepared with Mysore brinjal. It will be in green colour and lengthy variety. Some Andhra Karnataka border places grow the brinjal variety you have shown. With that also we prepare. Ofcourse lot of variety of dishes are prepared with brinjal. Your dishes are superb. 😋
