RE Provel Cheese : I have lived in Michigan for 30 years but grew up in the STL metro area (Belleville) and can't get Provel here. At 1:32 - 1:45 in this video, Rick Schaper from Dogtown Pizza says (and I'm paraphrasing) “...provolone is a blend, it’s got provolone, a little bit of swiss, a little bit of american….” Yet, earlier in the vid, at 1:15, a close-up shot of a block of Hoffman’s Provel states on the label : pasteurized process cheddar, swiss and provolone cheese. American Cheese is not listed as an ingredient ( !! ) and I'm thinking the cheddar is probably white cheddar. Further research (on the internet) suggests that a tiny amount of liquid smoke is also included. Recipes for this cheese vary widely, so I gave up trying to find the definitive, correct formulation, such that I could make it myself. My wife was in STL over the hoidays and brought back a rare treasure for me : an entire block of REAL Provel cheese !! She got it at Schnuck's in FVH. So, I'm making REAL, thin-crust, STL pizza this coming weekend ! ;-)
Provel is a mixture of Provolone, Swiss, and white cheddar with a little "smokiness" and is NOT made with American cheese. The FDA considers provel a processed cheese just like American Cheese. (which in case anyone was curious, means it is in fact a cheese) For heavens' sake, you can't say that you would never eat Provel and claim its not cheese if you have ever had American Cheese (which I'm sure that you have and if you haven't, kudos to you)

Before I got here, I was reading on Wikipedia the cheese was Provolone, CHEDDAR and swiss - while the man in the video mentioned American cheese (which is actually a combination of mild cheddar and jack, I think? anyway.............) I wonder if he was just saying the wrong thing to throw people off?
I love St. Louis style pizza BUT I'm not a big Imo's fan, I hate that when the subject of St. Louis style pizza comes up, most people think of this sorry fast food prefabbed crust version. Imo's also has lead people to believe that they are the originators of St.Louis style pizza. Not so, they have only been in business since 1964. Many others where serving St Louis style since the late 1940's and early 1950's
I can't imagine putting pepperoni on one of these things. Nothing more than sausage, onions and maybe some mushrooms. BTW I just ordered one from Frasher;'s restaurant in Scottsdale, AZ. You can get it outside of StL.

Great baseball town. Zero night life. Go to Dallas or Chicago for the woman, it is not happening in St. Louis. Job market is horrible. If you want buy a house here expect to get reamed. The houses here are not worth the price. Every man over 35 will ask what high school went to, so they can judge you and put you in a social class. Some of the people in West County think they are in Hollywood, just because they paid a ton of money on a home that is not worth half of what they paid. Suckers.

By the way touch guy, if you want to see a real ballpark and not a minor league one, go to New York. Texas or Baltimore for a real ballpark and not a modern day cookie cutter like Busch. KC has a better park than St. Louis.

Being raised in St. Louis, I love Imo's pizza. Most people I bring to St.Louis don't like Provel cheese and loose it right there.
Imo sells provel cheese and it is AWESOME on a salad.
