I need to up my dinnertime game! Those not only look delicious, they are really healthy! All those yummy vegetables. Nachos are a complete meal but I do love sweet potatoes and sweet peppers too.❤

We haven’t done many sheet pan meals, I need to revisit the idea. I did cook boneless skinless chicken breast that I’d cut in chunks with white truffle oil and bake, one of our boys still talks about it. ❤
Now tell me what truffle oil is because I see it and I have no idea what it is 😂
I honestly don’t know! It was in the markdowns at Hannaford. I’m assuming that it’s a light flavored oil that has somehow been infused with truffles. It had kind of an ‘earthy’ flavor that reminded me of mushrooms, which I think are in the same family.❤️

I did two Casseroles last week. One was a Breakfast Casserole the other a Pasta Pizza Bake. Even though I use a medium size pan it makes alot so I froze slices. I like the one pan meals as it is easy to make.
However sometimes I will cook 2 proteins, a carb and 2 or 3 vegetables and have them in the refrigerator to mix and match giving variety to my meals.
That’s a really good plan!
I’m thoroughly impressed with how much food you can put on one sheet pan! I could have watched an hour of this, so relaxing!
