Bud grafting is mostly used in late summer. You can use chip budding or grafting with a grafting tool or several other techniques in spring. Check out my spring grafting video, it's the time and technique you will likely want to use. For timing It depends what winter means to you. We wait until the freezing nights are mostly over. There can be a late one night frost, which is okay. Too many freezing nights can dry out your scion (piece of wood you graft on).
You're never going to surprise me again. Amassing is what it is.
Great video!

Why did these grafts fail? I have leafed out rootstock I wanted to graft into
You can just don’t dig them up, leave them in the ground, you can transplant them in fall.
What knife do you recommend?
A very sharp one, I like one side sharpened for grafting.
Could i bud graft my apple tree in winter or do i need to wait till it breaks dormancy?
