Heroes 3 has the "sacrifice for experience" thing, you just need to find an altar. Good factions can only sacrifice artifacts, evil factions can only sacrifice troops, while neutral factions can sacrifice both.

Honestly i also watched the whole animation in the main menu while drinking hot chocolate for a good while , after i beated the first campaign i was disappointed it didn't change. Also stayed in town messing around listening to the music and looking my glorious city
I could never get into heroes 5. 3D just did not fit the theme for me and rotating the map really made me get lost because it messes up my orientation in a turn based strategy game.
And here I am still playing HoMM3. They recently released ERA3... which doesn't change that much compared to ERA2, but at least adds a few nice scripts. At this point I'm so used to WoG, ERA and stuff like commanders, XXL maps, Hero Advanced Level Up (which removes randomness out of skill choice when you level) that I probably wouldn't be able to play normal HoMM anymore.
