🇻🇨How To Make Ducuna/Ducana: St Vincent and the Grenadines -(Caribbean Food)

    If you are in a foreign country make sure you use the right sweet potatoes or your ducuna will not form.
    Recipe
    3 cups of grated sweet potatoes (Batata sweet potatoes)
    1 cup of grated tania. You can use pumpkin, carrots, a green plantain, flour, or eddo to replace tania if you prefer.
    1 cup of grated coconut
    2 tablespoons of grated ginger (use black pepper or pepper sauce if you prefer)
    1 1/2 cups of sugar (less or more if you prefer)
    1/4 teaspoon of salt
    1 teaspoon of unsalted butter
    1/2 teaspoon of cinnamon
    1/2 teaspoon of nutmeg
    * Mix ingredients well and put mixture in banana leaves, let water boil before cooking and cook for 1 hour.
    * If banana leaves are unavailable you can substitute for aluminum foil or clear plastic bag. Use the same folding method as the banana leaves if using the foil but do not tie. If using clear plastic bag, tie it.
    *Always double my ingredients if you want to make more.
    *Correction- don't tie the stem too tight it can cause the banana leaves to crack up.
    Cook on medium high heat or high heat.

    In Honduras we call it Dugunu , made with Green banana and coconut milk . I live USA and my mom I we cook Together on weekends, Im proud of my Garifuna descendent.

    In Jamaica we call it 'dukunu', 'tie-a-leaf', or 'blue draws'.(y... it's along story🤣🤣) This must be another food that survived the African sojourn. It can also be made with cornmeal. My father is Vincy but I was born in Jamaica. Nuff love.🇻🇨🇯🇲

      Haha! I got the banana bush from the Caribbean market and the stem from my boss's garden. I washed, boiled, and dried them. Good to go!😂

      We eat it at anytime, by itself as a snack. Also, some people eat it with salfish and vegetables, and with a cup of tea.

      Hi Chantal! In my description I mentioned I accidentally used 2 cups of sugar. It was suppose to be 1 1/2 cups. You can used 1 cup, less, or none if you prefer.

      I think it will fall apart if you use parchment paper. We use plastic bags and aluminum foil if no banana leaves are not available. You can read in the description for more information as well.🙂

    Once I bought frozen banana leaf at supermarket but smell was awful so never used it. Will foil paper, or wilted corn husk work eventhough they're not as big as bananas leaves. How about foil paper?

      Yes we do it in foil paper as well when no banana leaves available. You can try one with the corn husk and see if it works as well.

      Yes you can use without the tania. Also, you can use a green plantain, pumpkin, carrots, or some flour if you don't want to use the tania.

      No flour whatsoever! I saw my grandmother put flour in hers back then at times but not a lot.

      @@annmcb yes eddo as a binding agent. I used to see my grandmother threw in few spoons of flour if she didn't use eddo.

      Yes Batata sweet potatoes and you can find them in the Caribbean market.
