I feel like all that buildup was meant to have something at the end where Sans attempts to flee, but you could chase him. Like he was dodging in the attacks, got hit, and now was trying to just convince you in any way to reset . So instead, he'd run . Then at the end, he'd be stopped by a vine [Flowey] cutting the song short , as Flowey attempts to take credit for the kill before being wiped out . This could also lead to a new ending where Asgore isn't killed at the end, and he has a GenoRoute fight. True Genocide, even .

In Pacifist he sacrifices himself to get rid from the control of the Player of his world, in Genocide he acknowledged he can't win against him, so he gave up not even trying to dodge. Dunno about Neutral route, I think he still tries to kill you and I've heard there was some other route called "Confession", it's basically the Neutral route, but you confess to monsters that Sans was killing the monsters and manipulating them, in result it makes them angry at Sans and Papyrus for some reason, probably because they are bone-related. At the end you make Sans kill himself, because of all the guilt he feels. That's basically it
