How about Banana Pudding without ever using sweetened condensed milk and no box pudding mixes either? In this pudding, you can even add a bit of freshly grated nutmeg for an additional warmth to the pudding.

Great choices! I wish there were a way to make banana pudding with real bananas without it being chunky or discoloured; so far it only seems to work using banana extract (still tastes amazing!)
Idk if it's the brand of sugar im using but I find this recipe too sweet. I mean if you think about it the sugar's probably only less than 10% of the entire recipe. But for those who want less sweeter, try just putting half the sugar first and add a bit more as you go along.

Oh no! That shouldn’t happen, did you use enough cornstarch? You should be able to add another tablespoon or 2 of cornstarch to a small amount of the pudding, bring the rest back to a boil and add it in. I hope this helps :)
It's just not very good in my opinion. I think you should have put the vanilla in while it was on the stove or before. when you put it in afterwards in my opinion it just tasted like you're eating vanilla extract. before anyone says I did measure it with measuring spoons.

Sounds great, I make banana by simply adding banana extract and it works perfectly especially for banana cream pie.

You could use arrowroot powder or even just plain flour. It will have a slightly thicker texture with plain flour but it would still work.

I’m sorry you didn’t enjoy it. Usually vanilla is added at the end because it is heat sensitive when boiled and the flavour can cook away.
This is not pudding. This is custard. Pudding does not have eggs!
