Salaam and greetings from USA! My mother is from Lucknow. We are settled here in US for the past 30 plus years. I believe that there's a slight difference in the methodology of making the Quorma of Lucknow and Kanpur. You and the Khansama Munney bhai has done a great service in introducing the Quorma recipe to the younger generation. The term' Khushbuyen' has not been some how explained or perhaps understood by many! In reality, Khushbuyen are consisting of 2 hard to find ingredients which are as under: 1. Meetha itr 2. Lazzat- e- t'aam. The above 2 ingrediants are hard to find else where but only in certain old grocers of the old city of Lucknow where the leading bawarchis of erstwhile lucknow buy there secret masalas. There is a huge difference between 'Mitha itr and the essance of 'Kewra'. Mitha itr is originally known as Kewra (Kewra, keora or kewda is an extract distilled from the flower of the Pandanus plant. It is processed in Leading perfumers of the Kannauj (A district of UP, which is famous for itriyaat and has historically famous). Myself being a foodie and the conservator of our traditional family recipes, took a trip to Lucknow and brought mitha itr and lazzat-t'aam with the help of my cousin. 'The word 'Roughan' is used for the ghee or oil in a recipe as the Quorma should have good 'Raughan'. ( not Rounaqdar :-)). I made this dish twice. First time with Mutton, it was so-so. The second time, with chicken, it was amazing. First time was basically an attempt to understand the recipe and what taste it is trying to achieve. The second time was better because I was knew from my previous experience what this recipe was all about. To make this dish, a person must not entirely go by the shown recipe but learn from it and adjust as he/she cooks. The Korma Masala was mild but very fragrant, the Chicken was well cooked, delicious, and moist. It was PERFECT! It must be eaten only with a naan or tandoori roti (anything thick and fluffy to absorb the salaan). The flavour was hotel-style; you would taste similar korma in old Muslim restaurants in India. Excellent effort by you. Munney Bhai versión was confusing but your commentary and explanation was perfect. Many thanks for taking the trouble and posting amazing dishes. Also, I must tell you that I don’t think people will share links of your recipes with friends because your dishes are so prefect that the ladies especially will not like to share it with other ladies. Mei ne kal munna bhai se inspired ho k banaya tha ye qourma. Magar 3 cheezon k bagair tarbooz seed powder, coconut, yellow pepper. Mujhey salaan mei coconut ka flavor acha nahi lagta.
