      I actually found it by accident one day when I took my peeler apart to scrub everything and thought "this could peel other stuff!"... happy accident because I use it now for everything!!

    I like that you explain things well, but you're not too chatty. I like that we get to see a lot of what you do, but not tediously so. The music choices, IMO, are nice. I wish you'd show your face some. Just found your channel. I'm enjoying it.

      I appreciate that! I am not a fan of being on camera (crazy for a you-tuber, right?). I am a VERY big girl, and I get insults on my arms, so I dread the insults that will come if I actually do a video showing more than that. I have made a few, but always end up deleting them... maybe someday I will actually upload one.

      Omg…..I just hate hearing that. I’m so sorry…I totally understand thought. My sister is a big girl too…about 450. Ya….too big for me not to worry. But I tell ya, she is so loved! Many friends, loving husband and family. And that girl can move too! She just retired from working as a Physical Therapist Assistant. She’s a beautiful person and we love her. And me? Lol…I’m a skinny minnie! And they worry about me being so skinny!! Lol….

    I can tell just by watching you, you know how to can. I just did some of these fries yesterday. It never occurred to me you could use a apple peeler for potatoes. I will have to look into that. Thank you for the video.

    you never cease to amaze me. just yesterday I was gifted 40lbs of potatoes.. I was truly wondering if they would hold up for french fries 🍟 plus i found another apple slicer at the thrift store for $3 going to take the slicer off an call it my veg peeler.. 😂 much love an Blessings 🥰

      What a great find!!! I do french fries, wedges, chunks, and new potatoes.... any way I can think of to can a potato that way they don't spoil before I can use them. It is so much cheaper to get them in bulk, so sometimes I spend a weekend peeling and canning or dehydrating potatoes.

    When we dehydrate potatoes we collect the potato starch off the raw potato soak , dry it and use it instead of buying potato starch. Just another use from those wonderful potatoes.

    Wow! I will have to try this next time I get potatoes! I just found your channel. New subscriber! Also new at pressure canning. I pressure canned split pea soup two days ago using my All American Pressure Canner that was sitting on a high self in my laundry room mocking me for the last two or three years! I finally got the courage to try and recipe in my never used Canner and it turned out wonderful!

    Wow, I was so excited when I heard you say Veg-O-Matic! My father brought one home for my mother when I was a kid and I thought it was the coolest thing. My mother made fries a couple times a week for six kids so this was a time saver. Actually she ended up preferring a paring knife and cutter her own but I was more than happy to use the Veg-O-Matic so I did more often than not. Of course it looked different but what a blast from the past.
    I am going to do the fries like this. I have watched enough people doing the potatoes this way so I'm going to try it. I myself very rarely eat fries but I will eat one out of every jar so it won't be just my husband taking on the challenge. Lol, (sorry I shouldn't make light of it.)

      I have never been included in Canuary or any of the playlists, even though I have submitted videos for a few of them. I am not sure why I get left off, but I just assumed it was because I am a rebel canner and not everyone agrees with rebel canning. I would love to participate, though.

      My hands just don't hold up to long peeling sessions like they used to. I can push my way through but the next day... they let me know about it!! The peeler makes it so much easier!

    This is great. They look wonderful. I am going to try this but just an fyi you don't need to sterilize jars when being processed ten minutes or longer both pressure and water bath. Thanks for the video.

      technically, you cannot sterilize a jar in a home kitchen. You can sanitize them with hot soapy water and a boiling water rinse, which I do for all jars. then I either hot pack immediately or let them cool for cold packing.

    Yahoo!!! I love this!! I'm a new canner. Just a year. I also just started dehydrating. Love it too.
    Had an epic FAIL the other day
    Dry canning a bunch of dehydrated veggies. I put them in the oven with no lids at 225 for 15 minutes. Put lids on and back in the over for an hour and every thing burnt inside my jars.
    I dont know why.... I wanted to cry.
    I had 20 jars that is now ruined.
    That's alot of drying time, food😥
    If you have any ideas why....please tell me. I'm still upset.

      when you put them back in the oven with the lids you should lower your temperature as low as it goes - usually around 100 or 125. They might still burn, even that low. I would suggest either vacuum sealing (if you have a sealer and attachment) or invest in a small package of oxygen absorbers. Then you can just drop an absorber in and it will seal your jar up.

      I have just always used room temperature water for canning potatoes. I try to always use everything at the same temp - hot, room temp, or cold.

      I have never tried, but when I can sweet potatoes they get pretty soft. Next time I can sweet potatoes I might try canning a couple of jars of fries to see how they hold up. You could always test just a couple of jars to see how they turn out. my first batch of french fries was 2 jars because I wasn't sure how they would fry up after canning. Now I do them 10 to 15 pounds at a time....

    I wonder how the texture would be. I've tried canning potatoes using various ways.
    I have never been able to can potatoes and keep good texture.
    What I have is eatable,,, but you can not mash them.

      canned potatoes seem too starchy for mashing - they become gummy. I make PLAIN mashed potatoes then dehydrate them and break them into instant potato granules. I season and add butter and sour cream/milk when I reconstitute them. Works just like the instant packets you get in the store, but tastes so much better. The fries are actually great - think Pomme Frite...

      I honestly don't know, I have not tried, but I don't see why not. sweet potatoes might get a little softer that white potatoes in the processing, so I would be very gentle taking them out of the jar.

      No, it is not. I have canned both ways. I prefer my fries without the skins so I peel them.

      Yes, but be careful taking them out of the jar. They get softer than regular potatoes when you can them.

      I have never tried. My suggestion is to try a jar or two - you still need to use the times for potatoes. you will know when you open them if they are going to be mush...

      Personal preference. I have dry canned potatoes, and will again, but I find that I really only like them for potatoes that I am going to eat in a "roasted" method, and don't care for them fried. Again, personal preference.

      It is the standard time for potatoes, regardless of the altitude and how you choose to cut them. My pressure is 11 pounds by gauge or 10 pounds by weight at my altitude, but that could be different for you.

    I went to walmart to look for the cheese, not available, shelves where they have the large family size containers was just about empty. I did get a 6 lb can of Busch chili beans. I am canning those tonight.

      I found the cheese sauce at Sam's. They still have it so if you are a member order it online. Enjoy I did it's great having it on the pantry shelf.

      My canner instruction call for 3 quarts in the canner, but double check your owners manual.

    May I ask opinions please ... somehow I wrote down that I could just rinse soak rinse soak potatoes and can (not boil them first) ... yes, I am VERY new to this. So I have some jars but they are 1"chunks :( not french fries. Should I toss them?? They are yellow potatoes I don't know if that makes a difference. Help please

    I have severe nerve damage in my hands where I can barely feel but I have a significant amount of nerve pain. I got myself one of these a while ago but didn't know about the blade! Duh!!

      One day when I was cleaning it after doing a bushel of apples I realized that piece came off, so then it was just a peeler. I have been using that way ever since. It is not a perfect peeling if they are lumpy, but it is so much better to slip a small peel spot than to have to peel a whole potato!

      To be perfectly honest, I do not know. I have never tried canning frozen potatoes. You could always test can a jar or two and see how they turn out.

    IDEA! My mom was 5’2” and always got burned on the hot canners…. She finally made a wooden stool with a long handle to make it easy to move around, she easily could get jars out of the pots when standing on the stool.

      I took the core removing blade (the circle) off. That way it doesn't spiral slice and core the potatoes. Mine is held on with a wing nut.
