His love of Lucknow and Saurabh’s for Kanpur and Orai/Jalaun make me nostalgic for places I have never been. एक सफ़र के दौरान मैं इनकी लिखी हुई “क़िस्सा क़िस्सा लखनऊवा” पढ़ रहा था। किताब मुकम्मल होने से पहले सफ़र ख़त्म हुआ। मैं तो मंज़िल पहुँच गया पर किताब मेरे साथ ना थी। हालाँके बाद में Kindle पे डाउनलोड कर तो ली, लेकिन पन्नों को पलटते हुए पढ़ने का जो मज़ा है, वो टेबलेट में कहाँ। जहां किताब पढ़नी छोड़ी थी वहाँ से आगे बढ़ने के लिए अब तक वापिस जाना नहीं हुआ। शायद किसी और सफ़र पे मैं, लखनऊ और बाजपेयी जी कभी फिर मिलेंगे।

Lucknow s all top foods are overrated tried biryani and nihari chaat etc. yes there is a nostalgia and love by the locals. The original Awadh cuisine is very diverse and they are the flavours of rags and common people. Which is overtaken by the flavours of nawabs. Who were pan chewing fat nawabs and preferred mild and rich food mostly keema or gilawat etc. heavy use of cream butter nuts etc. while nihar was a labour class food. Tough joints simmered all day long till they fall of the bone. my point is before this 200/300 years old legacy , it was mostly vegetarian based cooking. The showcase cuisines doesnt represent true Awadh. Would have loved if today’s generation could look beyond and find out about bathua saag, Fare, Tehri, kathal, mutter nimona, methi dal and aloo etc with thick ground grain roti? Where it’s all lost ?
